Creamy pumpkin pasta image

Make the most of pumpkins this autumn. When puréed and combined with mascarpone and parmesan, their flesh transforms into a silky, delicious pasta sauce

Provided by Esther Clark

Categories     Dinner

Time 50m

Number Of Ingredients 9

2 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, crushed
500g pumpkin or squash, peeled and cut into roughly 3cm cubes
50-100ml whole milk
2 tbsp tomato purée
2 tbsp mascarpone
350g short pasta (rigatoni or penne work well)
40g grated parmesan or vegetarian alternative, plus extra to serve

Steps:

  • Heat the oil in a large, shallow, flameproof casserole or frying pan over a low-medium heat and fry the onion with a pinch of salt for 10-15 mins until softened and translucent. Add the garlic and fry for 1 min more. Remove from the heat and leave to cool slightly.
  • Meanwhile, cook the pumpkin in a pan of boiling salted water for 10-15 mins until tender when pierced with a cutlery knife. Drain and tip into a blender (or use a hand blender). Blitz with 50ml milk and the onions until completely smooth, gradually adding more milk until the mixture is thick enough to just coat the back of a spoon (you may not need all the milk). Tip into a large frying pan with the tomato purée and mascarpone, and bring to a simmer over a low heat.
  • Cook the pasta in a large pan of boiling, salted water following pack instructions. Drain, reserving a cupful of the cooking water. Toss the pasta with the pumpkin sauce, parmesan and 50-100ml of the reserved water to loosen. Season and scatter with extra parmesan.

CREAMY PUMPKIN PIE

Creamy Pumpkin Pie image

This is my grandmother's pie recipe and is excellent for fresh pumpkin. I cut my pumpkins and bake them for an hour or so, depending on the size of the pumpkin, and them mash them through an old colander that has a pestle with it. Also passed down from my grandmother. I freeze 4 cups of processed pumpkin so that I always have the exact amount of pumpkin I need for a pie.

Tips:

  • To ensure the bubble ring batter is smooth and lump-free, sift the dry ingredients together before adding them to the wet ingredients. If you don't have a sifter, whisk the dry ingredients together vigorously to remove any lumps.
  • For a perfectly golden crust, preheat your oven to the correct temperature before baking. If your oven is not hot enough, the bubble ring will not cook evenly and may end up soggy.
  • To prevent the bubble ring from sticking to the pan, grease and flour the pan thoroughly before pouring in the batter. You can also use a non-stick cooking spray.
  • Keep an eye on the bubble ring while it's baking. The cooking time may vary depending on your oven, so it's important to check on it regularly to prevent overbaking.
  • Once the bubble ring is baked, let it cool completely before frosting. This will help prevent the frosting from melting and becoming runny.

Conclusion:

The creamy pumpkin bubble ring is a stunning and delicious dessert that is perfect for any occasion. With its golden crust, creamy pumpkin filling, and fluffy whipped cream frosting, this cake is sure to impress your guests. The tips provided in this article will help you make the best creamy pumpkin bubble ring possible. So what are you waiting for? Gather your ingredients and start baking!
