CREAMY MUSHROOM-POTATO BAKE
The day I first made this, we'd invited a neighbor-a bachelor farmer-over, and I wanted to fix something hearty. It was a hit instantly. These days, our three sons enjoy it as a change from regular mashed potatoes. We've found that it's best served with beef...either with or without gravy. -Kathy Smith, Granger, Indiana

CREAMY POTATO PORK CHOP BAKE
Chops browned, then baked with hashbrowns, onion rings and Cheddar cheese in a sour cream sauce. Very tasty and easy. I've even made it an 'all-in-one' dinner by adding a can of drained green beans to the potato mixture before pouring it into the baking dish. Hooray for spuds 'n' chops!

BETTY'S CREAMY CHICKEN, BACON AND POTATO BAKE
Creamy comfort food made into a complete meal - delicious! I like chicken thighs as they remain moist during oven baking. This reheats beautifully and can be made ahead. Note - you can add mushrooms when you are frying the bacon if you are a fan of them.

Steps:
- Preheat oven to 350 degrees Fahrenheit.
- Grease 13x9 baking dish.
- Add butter and olive oil to frying pan on medium-high heat.
- When hot, add Spam and fry until slightly browned.
- Remove Spam from pan and add sliced onions (add more butter to pan if necessary); cook onions for 4 or 5 minutes until translucent.
- Slice potatoes (I used a mandoline set to 1/32).
- Layer in greased casserole dish: Potatoes, onions, Spam, cheddar, alfredo sauce (just drizzle on each layer, no need to pour - this is very rich!).
- Keep layering until you run out of ingredients.
- Cover with foil and bake for 2 hours.
Tips:
- To achieve a creamy and smooth potato bake, use starchy potatoes like Russet or Yukon Gold. These potatoes hold their shape well and absorb the creamy sauce.
- For a crispy topping, use a combination of grated Parmesan cheese and bread crumbs. The cheese will melt and brown, while the bread crumbs will add a crunchy texture.
- To prevent the potato bake from drying out, cover it with aluminum foil during baking. This will create a moist environment that helps the potatoes cook evenly.
- If you're using fresh herbs, add them towards the end of cooking to preserve their flavor and aroma.
- For a richer flavor, use a combination of heavy cream and milk. You can also add a dollop of sour cream or cream cheese for extra creaminess.
Conclusion:
With its creamy texture, crispy topping, and delicious flavor, this potato bake is sure to be a hit at your next gathering. It's easy to make and can be customized to your liking. So experiment with different ingredients and find your perfect creamy potato bake recipe!
