Pastry for double-crust pie (9 inches)
3/4 cup plus 1 tablespoon sugar, divided
3 tablespoons cornstarch
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
4 tablespoons heavy whipping cream, divided
1 tablespoon lemon juice
1/2 teaspoon almond extract
7 cups sliced peeled peaches (about 7 medium)

Steps:

  • Line a 9-in. pie plate with bottom pastry; trim even with edge of plate. Set aside. In a bowl, combine 3/4 cup sugar, cornstarch, nutmeg, ginger and cinnamon; stir in 3 tablespoons cream, lemon juice and extract. Add the peaches; toss gently. Pour into the crust., Roll out remaining pastry to fit top of pie; make decorative cutouts in pastry. Place top crust over filling; trim, seal and flute edges. Brush pastry and cutouts with remaining cream. Place cutouts on top of pie; sprinkle with remaining sugar., Cover edges loosely with foil. Bake at 400° for 40 minutes. Remove foil; bake 8-12 minutes longer or until crust is golden brown and filling is bubbly. Cool on a wire rack. Refrigerate leftovers.

2/3 cup boiling water
1 cup vanilla ice cream
1 carton (8 ounces) frozen whipped topping, thawed
1 cup diced fresh peeled peaches
1 deep-dish pastry shell (9 inches), baked
Sliced peaches and/or mint leaves, optional

2 pillsbury ready-made (un-roll and fill) pie crusts (two come in pkg.)
CREAM CHEESE FILLING
1 box 8 oz. neufchatel (cream) cheese
1/4 c sugar
1 large egg, room temperature
1 tsp pure vanilla extract
BERRY FILLING
1 1/2 c fresh blackberries
1 1/2 c fresh peaches, peeled and sliced
1 1/2 Tbsp corn starch
3/8 c granulated sugar
1 tsp pure vanilla extract
1 pinch ground cinnamon
ON THE TOP CRUST
2 Tbsp unsalted butter, melted
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg

Steps:

  • 1. Preheat oven to 375. In a 9-inch pie plate, place one of the unrolled pie crusts. (They need to soften a bit at room temperature to make it easy to work with them. Instructions are on package.) I didn't have these crusts available from my small town grocer, so I purchased two ready-made deep dish pie crusts and used one of these as the bottom and one as the top crust.
  • 2. Mix together the softened neufchatel cheese, sugar, egg, and vanilla until creamy. Pour into the unbaked pie crust.
  • 3. In a medium sized bowl, place 1 1/2 cup of blackberries and 1 1/2 cup of peeled and sliced peaches. In a small bowl, mix the sugar and corn starch, and then pour this into the bowl of fruit and mix gently. Add the vanilla and pinch of cinnamon and mix gently.
  • 4. Spoon this mixture over the top of the cream cheese filling in the pie plate.
  • 5. Place top crust on. Press edges together to seal the top crust and bottom together. Cut off excess. (My mother would place remaining strips in a pan and salt lightly before baking them to make crackers.)
  • 6. Spread out the melted butter on top of the pie crust and dust with the cinnamon and nutmeg mixed together.
  • 7. Bake for 35 minutes. Crust will be golden brown. If you want a truly decadent dessert, serve with vanilla ice cream or whipped cream, but the neufchatel cream cheese makes it decadent-tasting already while keeping the fat content at a minimum. 1 recipe pastry for a 9 inch single crust pie
4 cups fresh peaches - peeled, pitted, and sliced
¾ cup white sugar
¼ cup all-purpose flour
¼ teaspoon salt
¼ teaspoon freshly grated nutmeg
1 cup heavy whipping cream

Steps:

  • Peel and slice peaches.
  • Combine sugar, flour, salt and nutmeg. Add to the peaches and toss lightly. Turn out into pie shell. Pour whipping cream evenly over top.

3 c fresh peaches, peeled and chunked
1 refrigerated pie crust
1/2 c granulated sugar
1/2 c brown sugar
1/3 c all purpose flour
1 tsp vanilla
1/8 tsp salt
2 eggs, beaten
2/3 c sour cream
1/4 c sugar-for topping
1/4 c brown sugar-for topping
4 Tbsp butter, cold-for topping
1 tsp cinnamon-for topping

Steps:

  • 1. Preheat oven to 350. Place pie crust into pie dish.
  • 2. Peel and chunk fresh peaches and place into pie crust.
  • 3. Combine 1/2 cup sugar, 1/2 cup brown sugar, 1/3 cup flour, salt and sour cream. Add in beaten eggs. Stir until well blended. Pour over peaches.
  • 4. Combine 1/4 cup sugar, 1/4 cup brown sugar, 1/2 cup flour and cinnamon in a small bowl. With a fork slowly cut in butter a pat at a time until you get a crumbly mixture. Make sure the butter is cold. Sprinkle crumbly mixture over peaches and sour creme mixture.
  • 5. Bake at 350 about one hour or until golden brown on top. Cool and refrigerate several hours before serving. Cool whip is yummy on top.

Tips:

  • Use ripe peaches. Ripe peaches will have a sweet and juicy flavor, which will make your pie taste amazing. If you can't find ripe peaches, you can also use frozen peaches that have been thawed and drained.
  • Don't overwork the dough. Overworking the dough will make it tough. Just mix the ingredients until they come together, then stop.
  • Chill the dough before rolling it out. Chilling the dough will make it easier to roll out and prevent it from sticking to your work surface.
  • Use a sharp knife to slice the peaches. A sharp knife will help you get clean, even slices of peaches. This will make your pie look more professional.
