CREAMY PASTA WITH SALMON

Creamy Pasta with Salmon image

There was a lot of kitchen improv involved in the making of this recipe! It works as a seafood dish or a pasta dish. It's served with a dilly sour cream sauce!

Provided by Chef AidF

Time 40m

Yield 4

Number Of Ingredients 10

1 (8 ounce) package spaghetti
2 medium (blank)s lemon, juiced
salt and ground black pepper to taste
½ pound salmon fillet
1 tablespoon olive oil
1 (8 ounce) package fresh green beans, trimmed and halved
1 large shallot, minced
¼ cup sour cream
1 bunch chopped fresh dill
1 cup garden cress, or more to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.
  • While pasta cooks, pour enough water into a frying pan to cover salmon; add dill. Strain in lemon juice. Mix and season with salt and pepper. Add salmon to the pan and poach over medium-high heat, flipping as necessary, until it flakes easily with a fork, about 10 minutes. Remove the skin when you flip it the first time.
  • At the same time, heat olive oil in a pan over medium to medium-high heat. Saute green beans and shallots until the shallots start to brown and the green beans soften, 8 to 10 minutes.
  • Once the salmon is poached, use tongs to set it aside in a shallow bowl, but don't throw the poaching mixture away. Take about 1/4 cup of the poaching mixture and add it to a saucepan. Add sour cream and chopped dill and mix over medium heat until combined. Remove from heat and mix into pasta.
  • Place pasta on serving plates, along with some chunks of the salmon, plus some of the sauteed mixture. Try to get an even mix if possible. Sprinkle with garden cress. Serve immediately!

2 tablespoons butter
2 tablespoons olive oil
2 shallots, minced (about 3/4 cup)
3 garlic cloves, minced
3 plum tomatoes, chopped
1 1/3 cups dry white wine
1/2 cup bottled clam juice
2 tablespoons fresh lemon juice
1 teaspoon dried marjoram
1 3/4 pounds skinless salmon fillets, cut into 1/2- to 3/4-inch pieces

Increase heat to medium-high. Add wine, clam juice, lemon juice and marjoram; simmer 5 minutes. Add salmon and simmer until almost cooked through, stirring occasionally, about 5 minutes. Add arugula, capers and fresh herbs to salmon mixture. Simmer until salmon is just cooked through and arugula is just wilted, about 2 minutes. Season to taste with salt and pepper.

  • Drain pasta well and return to pot. Add salmon-arugula mixture to pasta and toss to coat. Serve warm.

PASTA WITH SMOKED SALMON AND CAPERS

Pasta with Smoked Salmon and Capers image

Another classic combination, this dish makes people think you went to a lot of trouble. Actually it's quite simple. Any shape of pasta works, but I prefer a small noodle such as shells or bowties. Despite what an Italian might otherwise recommend, I like to serve this dish with freshly grated Parmesan cheese.

Yield Serves 4

Number Of Ingredients 10

1/4 cup extra-virgin olive oil
1 small onion, chopped
1/4 pound smoked salmon, chopped
1 cup heavy cream (a.k.a. whipping cream)
3 tablespoons capers, drained
Salt and freshly ground black pepper to taste
N/A freshly ground black pepper
1 pound pasta, cooked al dente, drained (reserving about 1/4 cup of the cooking water), and tossed with olive oil
N/A olive oil
Freshly grated imported Parmesan cheese

Steps:

  • In a large skillet, heat the olive oil over medium-high heat. Add the onion and sauté until translucent, but not browned. Add the smoked salmon and continue cooking just until the salmon turns opaque, 1 to 2 minutes. Pour in the cream and add the capers. Taste and adjust seasoning with salt and pepper. Be careful how much salt you add because the smoked salmon and capers are both salty. Add the pasta and toss to coat. If there doesn't appear to be enough sauce, add a couple of tablespoons of the pasta cooking water to thin it down. Serve with freshly grated Parmesan cheese.

Tips:

  • Use high-quality ingredients: The better the ingredients, the better the pasta will be. Look for fresh, flavorful arugula, smoked salmon, and lemon.
  • Don't overcook the pasta: Cook the pasta according to the package directions, but be careful not to overcook it. Overcooked pasta will be mushy and won't hold the sauce well.
  • Make the sauce while the pasta is cooking: This will help to ensure that the sauce is hot and ready when the pasta is done.
  • Add the arugula and smoked salmon at the end: This will help to prevent the arugula from wilting and the smoked salmon from overcooking.
  • Serve immediately: This dish is best served immediately after it is made. The pasta will start to absorb the sauce and become mushy if it sits for too long.

Conclusion:

This creamy pasta with smoked salmon, arugula, and lemon is a quick and easy weeknight meal that is packed with flavor. The creamy sauce is made with cream, Parmesan cheese, and lemon zest, and the smoked salmon and arugula add a smoky, peppery flavor. This dish is sure to please everyone at the table.
