This luxuriously creamy bake is the perfect partner to Sarah's veggie pie

Provided by Sarah Cook

Time 1h35m

Number Of Ingredients 7

800g parsnip , peeled
400ml milk
200ml double cream
200ml vegetable stock
4 tsp wholegrain mustard
4 tbsp grated Twineham Grange cheese (see Know-how, below)

Yield Makes 8 servings

Number Of Ingredients 10

2 cups 1/2-inch cubes peeled kabocha squash (about 1 1/2 pounds)
2 cups 1/2-inch cubes peeled butternut squash (about 1 1/2 pounds)
2 cups 1/4- to 1/3-inch cubes peeled parsnips (about 12 ounces)
5 tablespoons butter
1/2 cup pure maple syrup
2 garlic cloves, minced
1 1/2 tablespoons chopped fresh rosemary
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
3/4 cup coarsely chopped Marcona almonds (about 3 1/2 ounces)

Steps:

  • Butter 11x7x2-inch glass baking dish. Combine kabocha and butternut squash and parsnips in large bowl. Melt butter in small saucepan over medium heat. Whisk in next 5 ingredients. Add to squash mixture and toss to coat. Transfer mixture to prepared baking dish. DO AHEAD: Can be made 1 day ahead. Cover and chill. Bring to room temperature before continuing.
  • Preheat oven to 375°F. Cover squash mixture with foil. Bake covered 40 minutes. Uncover; bake until all vegetables are tender, about 20 minutes longer. Sprinkle with almonds and bake 10 minutes.

Tips:

  • Choose the right squash and parsnips: For the best flavor and texture, select firm, heavy squash and parsnips. Avoid any that are bruised or have soft spots.
  • Peel and cube the squash and parsnips evenly: This will help them cook evenly.
  • Use a sharp knife to cut the squash and parsnips: This will make the job easier and safer.
  • Don't overcrowd the baking dish: Give the squash and parsnips enough space to cook evenly.
  • Season the squash and parsnips well: Use a combination of salt, pepper, and your favorite herbs and spices.
  • Roast the squash and parsnips until tender: This will take about 30-45 minutes, depending on the size of the cubes.
  • Make the creamy sauce while the squash and parsnips are roasting: This will save you time and ensure that the sauce is hot and ready when the vegetables are done.
  • Use a high-quality cheese: The cheese is one of the main ingredients in the creamy sauce, so it's important to use a good one. Look for a cheese that is flavorful and melts well.
  • Serve the creamy parsnip squash bake hot: This dish is best served immediately after it's made.

Conclusion:

Creamy parsnip squash bake is a delicious and easy-to-make dish that is perfect for a weeknight meal. It's packed with flavor and nutrients, and it's sure to be a hit with the whole family. So next time you're looking for a new side dish, give this recipe a try. You won't be disappointed!
