1 cup Italian seasoned bread crumbs
½ cup panko bread crumbs
¼ cup Parmesan cheese
1 teaspoon seasoning salt (such as Mrs. Dash® garlic and herb)
1 teaspoon black pepper
1 teaspoon garlic powder
½ cup spicy ranch dressing, or to taste
½ cup buttermilk ranch dressing, or to taste
6 skinless, boneless chicken breasts
¼ cup melted butter

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Combine Italian bread crumbs, panko bread crumbs, Parmesan cheese, seasoning salt, pepper, and garlic powder in a bowl.
  • Combine spicy ranch dressing and buttermilk ranch dressing in a separate bowl. Dip chicken into dressing until both sides are coated, then coat in bread crumb mixture. Place chicken in a single layer on the prepared baking sheet, leaving space between pieces. Lightly drizzle chicken with melted butter.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, 30 to 35 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

15 oz mayonaise
8 oz sour cream
1/3 c of milk (or less as desired, use less for dips)
1 tsp garlic powder
1 tsp onion powder
1/2 tsp ground black pepper
1/4 tsp salt
2 tsp parsley flakes
1 tsp dill weed
1-2 oz fresh shredded Parmesan

Steps:

  • 1. Mix mayonnaise, sour cream and milk in a bowl.
  • 2. Add garlic powder, onion powder, parsley, salt, pepper, and dill. Mix well.
  • 3. Add in shredded Parmesan cheese. Chill and serve. Note: add less milk for dips. Also omit Parmesan for ranch dressing.

1/2 Cup (121g) Half and Half
5 Teaspoons (24.6ml) Fresh Lemon Juice
1/4 Large Sweet White Onion, quartered
1 Teaspoon (5ml) Worcestershire sauce
1/4 Cup (50g) Fresh Grated Parmesan cheese
1/2 Teaspoon (.5g) each of dried thyme, teaspoon oregano, garlic powder
1/4 Teaspoon (.25g) fresh ground black pepper
1/4 Teaspoon (.25g) Chipotle Chile Powder - Optional (see notes**)
1 Tablespoon (3.8g) Fresh Chopped Parsley
1 Tablespoon (3.5g) Fresh Chopped Chives

Steps:

  • Add the lemon juice to the half and half and set aside for 5 minutes. This will result in a homemade buttermilk with a nice lemon flavor. It may form some clumps but those will resolve when the dressing is blended.
  • Place all of the ingredients (except the diced chives and parsley) in a blender. Process until smooth.
  • Add the parsley and chives and pulse a few times to combine.
  • Best served after being chilled in the refrigerator in a sealed container for one hour.

1/2 cup sour cream
1/2 cup grated (powdered) Parmesan
1/4 cup fresh Italian (flat-leaf) parsley leaves, minced
1 tablespoon sliced green onions
1 tablespoon ground tricolor peppercorns
1 teaspoon Worcestershire sauce
1/2 teaspoon white vinegar
1/4 teaspoon kosher salt
Dash hot sauce
1 clove garlic, minced
1/4 to 1/2 cup buttermilk (as needed for desired consistency)
2 heads iceberg lettuce, cut into wedges
3 pounds carrots, shredded
Crushed tricolor peppercorns, for garnish

Steps:

  • For the parmesan-peppercorn ranch: Put the mayonnaise, sour cream, Parmesan, parsley, green onions, peppercorns, Worcestershire, vinegar, salt, hot sauce and garlic in a blender or food processor and blend to combine. Add the buttermilk to the desired consistency and blend thoroughly. Chill for 30 minutes to a couple of hours before serving, thinning with more buttermilk if needed.
  • For the wedge salad: Arrange the lettuce wedges on a white rectangular plate in a straight line slightly overlapping. Drizzle the dressing over the lettuce, add the carrots and sprinkle with the crushed peppercorns.
