This Creamy Garlic Parmesan Orzo can be on your table in 15 minutes! While it's perfect as a side dish, I prefer this as a meal on its own because it's cheesy, creamy and really hits the spot.

Number Of Ingredients 11

2 tablespoon olive oil
4 tablespoon butter (unsalted)
1 small onion (chopped)
4 cloves garlic (minced)
2 cups orzo (dry)
1/2 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)
2 cups chicken broth (low sodium)
2 cups half and half
1 1/2 cup Parmesan cheese (freshly grated)
2 tablespoon fresh parsley (chopped)

Steps:

  • In a large skillet add the olive oil, butter and cook for about 30 seconds until the butter melts. Stir in the onion and garlic and let it cook for about 2 minutes until the onion softens and the garlic becomes aromatic.
  • Add the orzo to the skillet and let it cook for about 2 minutes just in the oil so that it starts to toast lightly, this will give it a nutty flavor.
  • Season with salt and pepper then stir in the chicken broth and half and half. Bring to a boil, then turn the heat down to a medium-low, cover with a lid and let it cook for 5 minutes.
  • Remove the lid and stir in the Parmesan cheese and fresh parsley.
  • Serve immediately.

1 Tbsp olive oil, extra virgin
2 Tbsp butter
1/2 small onion
1 Tbsp garlic minced
1 c orzo pasta
1 c jasmine rice
2 tsp fresh cracked black pepper
2 tsp salt
3 c chicken stock low sodium
2 Tbsp dried parsley
1/4 c parmesan cheese

Steps:

  • 1. Saute oil, butter, garlic and onions for 5 minutes. Add orzo and rice and toast them for 5 mins.
  • 2. Slowly add in chicken stock. Stir. Cover and cook 20 minutes. Stirring occasionally. Add parsley and Parmesan cheese stir and serve.

2 tablespoons olive oil
1 small onion, chopped
2 cloves garlic, crushed
Olive oil
2 cups orzo
2 cups steamed vegetables, carrots, broccoli, squash, etc
4 cups low sodium canned chicken stock
Parmesan, grated

  • Heat oil in large sauce pan, cook onion over medium high heat for 2 minutes. Stir In garlic and cook for 30 seconds. Stir in uncooked orzo & and toss to coat and cook for 1 minute. Reduce heat to medium. Slowly stir in 1/2 cup of stock at a time. Adding the next half cup when the previous one has been absorbed. When orzo is tender stir in a drizzle of olive oil and season with salt and pepper. Toss orzo with steamed vegetables. Serve with grated Parmesan and black pepper.

6 garlic cloves, peeled and thinly sliced
1/2 cup orzo pasta, uncooked
1/2 cup long grain rice, uncooked
1 (14 1/2 ounce) can reduced-sodium chicken broth
1/3 cup water
3 green onions, thinly sliced
1/3 cup fresh basil leaf, thinly sliced
1/4 cup fresh Italian parsley, minced
1/4 teaspoon salt

Steps:

  • In a large nonstick skillet heat oil over medium-high. Add garlic and cook for 1 minute, being careful not to burn.
  • Add orzo and rice; cook 4-6 minutes longer or until lightly browned.
  • Stir in broth and water.
  • Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes, until rice is tender and liquid is absorbed. (Add more water as needed if rice and pasta are not done before liquid is absorbed).
