Tips:

  • Use a good quality onion: A sweet onion, such as a Vidalia or Walla Walla, will give the soup a more flavorful and complex taste.
  • Don't overcrowd the pot: When you're cooking the onions, make sure to spread them out in a single layer in the pot. This will help them brown evenly and prevent them from steaming.
  • Cook the onions until they're caramelized: This will take about 15-20 minutes. The onions should be a deep golden brown and very soft.
  • Use a good quality broth: A homemade chicken or vegetable broth will give the soup a much better flavor than a store-bought broth. If you don't have time to make your own broth, you can use a low-sodium store-bought broth.
  • Add the potatoes and cook until they're tender: This will take about 15-20 minutes. The potatoes should be soft enough to easily pierce with a fork.
  • Use a good quality cream: A heavy cream or whipping cream will give the soup a rich and creamy flavor. If you're using a lower-fat milk, the soup will be thinner.
  • Season the soup to taste: Add salt, pepper, and any other spices you like to taste. You can also add a splash of white wine or lemon juice for a bit of acidity.
  • Serve the soup hot: Creamy onion potato soup is best served hot, topped with shredded cheese, croutons, or chopped parsley.
