(Use any liquid for deglazing, whether water, wine, stock, vinegar or tomato juice.) This recipe leaves the choice of mushrooms up to you: Cremini and shiitake are a good combination, but you could even use rehydrated porcinis. If you are craving greens to cut through the richness, stir a few handfuls of baby spinach into the pasta just before you turn off the heat.

3 tablespoons olive oil
1 leek, white part only, finely sliced (about 5 ounces)
2 garlic cloves, finely chopped
3 cups mixed mushrooms, such as cremini, shiitake or oyster, torn or sliced (about 6 ounces)
1 lemon, halved
1 pound short pasta, such as orecchiette, cavatappi, gemelli or penne
4 cups vegetable stock
2 tablespoons unsalted butter
1/2 cup chopped fresh parsley, plus more for garnish
Kosher salt and black pepper
1 cup whole-milk ricotta
1/2 to 1 teaspoon red-pepper flakes

Steps:

  • Heat a wide, deep 12-inch skillet or Dutch oven over medium-high. When hot, add the olive oil and leeks, reduce heat to medium and cook, stirring constantly, until softened and lightly golden, 5 minutes.
  • Stir in the garlic and mushrooms. Cook, undisturbed, for 2 minutes, then stir and cook, undisturbed, until the mushrooms start to caramelize and stick to the bottom of the pan, another 2 to 3 minutes. (This allows the water from the mushrooms to evaporate, encouraging caramelization.) Add the juice of one lemon half to deglaze the pan and stir to combine.
  • Add the pasta and stock; stir well. Cover with lid and cook on medium heat. Begin tasting pasta 10 minutes after you add it. (All pasta shapes and brands will have different cooking times. You want the pasta to be just tender.)
  • Once the pasta is cooked, turn off the heat and add the butter and parsley. Squeeze in the juice from the remaining lemon half and stir until butter is melted and dispersed. Season with salt and pepper.
  • To serve, top with ricotta, red-pepper flakes (to taste) and more chopped parsley.

olive oil flavored cooking spray or 1 tablespoon olive oil
1 teaspoon minced garlic
1 onion, finely chopped
1/2 red capsicum, finely chopped
3 slices bacon, chopped (WW brand if possible)
7 mushrooms, sliced
185 ml evaporated low-fat milk
1 tablespoon Dijon mustard
100 g baby spinach leaves
200 g pasta (any type - I use penne or fettucine)
chili flakes (optional)
black pepper, to taste

Steps:

  • Bring a large pot of salted water to the boil.
  • Spray a pan with olive oil spray and sauté finely chopped onion, capsicum, bacon and garlic.
  • When soft add mushrooms and as much or as little chilli as you like.
  • Cook until soft.
  • Put pasta into boiling water and bring back to the boil.
  • Cook to your liking.
  • Add dijon mustard and evaporated milk to the onion mix.
  • Stir to combine and heat very gently until pasta is ready.
  • If you like a'wetter' sauce add a small amount of the pasta cooking water to the onion/milk mixture.
  • Place washed spinach leaves into a colander.
  • When ready drain the pasta over the spinach.
  • This will wilt the spinach- the only'cooking' it needs.
  • Add the pasta/spinach mix to the sauce.
  • Stir to combine.
  • Serve topped with freshly ground black pepper and parmesan cheese if desired.
  • **Note: In Australia, on the Weight Watchers points plan, WW bacon is 1/2 a point for 3 slices and the small tin (185ml) of carnation brand light and creamy evaporated milk is 3 points.

8 ounces fresh or dried thin pasta (such as linguine)

Steps:

  • Place mushrooms in small bowl. Pour boiling water over. Cover and let stand until mushrooms soften, about 15 minutes. Remove mushrooms from liquid; reserve soaking liquid. Coarsely chop mushrooms; discard any tough stems.
  • Combine wine and mushrooms in heavy large skillet. Boil until wine is reduced by half, about 2 minutes. Add cream and tarragon. Slowly pour in mushroom soaking liquid, leaving sediment at bottom of bowl. Boil until sauce is thick enough to coat spoon, about 5 minutes. Mix in green onions and lemon juice. Season with salt and pepper.
  • Meanwhile, cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain pasta.

1 lb spaghetti or your favorite pasta
10 chicken bouillon cubes
1 can(s) artichoke hearts, drained and quartered
3 large boneless skinless chicken breasts, cooked and diced
1/2 lb fresh mushrooms, sliced
2 Tbsp butter
3 Tbsp olive oil, extra virgin
1/2 c flour
1 1/2 c milk
4 c chicken broth
3 Tbsp sherry (cooking sherry ok)
1/2 small onion, chopped fine, or 1 tbsp minced dried
1 Tbsp granulated onion
1 Tbsp granulated garlic
4 green onions, sliced thin
salt & white pepper to taste
1/2 c 6 cheese italian blend, grated
2 Tbsp fresh parsley, chopped

Steps:

  • 1. Dissolve bouillon cubes in boiling water. Cook spaghetti according to directions and drain. Set aside.
  • 2. In deep skillet, heat olive oil and butter over high heat. Sear chicken tenders until golden brown, about 5-7 minutes per side.
  • 3. Remove chicken to a plate and set aside. When cool tear chicken into bite size pieces and set aside.
  • 4. Over medium heat add flour to pan drippings and make a blonde roux. Cook for about 5 minutes. If you're using fresh onion add that to roux and cook for another 3-4 minutes but don't brown the roux.
  • 5. While stirring constantly gradually add the chicken broth, making sure all lumps are removed. Add milk until gravy reaches a smooth, thin consistency.
  • 6. Reduce heat to low, add sherry, chicken, artichoke hearts, green onions, dried minced onion (if using), granulated onion & garlic, white pepper and mushrooms. Let simmer for about 20 minutes, stirring occasionally.
  • 7. If sauce starts to get too thick add a little more milk. Simmer another 5 minutes and add cheese and stir until completely melted.
  • 8. Taste for seasoning and add as needed. Ladle sauce over spaghetti and sprinkle with parsley. Serve along with garlic french bread. Enjoy!

1 (7 ounce) package cheese tortellini (or larger)
1 (8 ounce) package deli cut ham steaks, cubed (or larger)
8 ounces frozen peas, partially thawed
8 ounces fresh sliced mushrooms
2 cups white wine (I use Pinot Grigio)
3/4 pint half-and-half cream (I use fat free)
2 cloves garlic (I use a garlic press to mince them)
3 tablespoons light butter (I use I Can't Believe it's Not Butter, Light)
3 -4 tablespoons cornstarch
1 tablespoon parmesan cheese
salt and pepper, to taste

Steps:

  • Put 3 tbsp. of light butter in a large saute pan over medium-high heat. After a minute, put in minced garlic cloves
  • Add 1 cup of white wine then add all of the mushrooms and saute for 3-4 minutes
  • Start to boil the water for the pasta. Add cubed ham and peas to the saute pan then add the remaining 1 cup of white wine and saute for 3-4 minutes
  • Put your pasta in the boiling water. To the saute pan, add 3/4 pint of half & half, then lower the temperature to low-medium heat (so that it doesn't bubble)
  • After 2-3 minutes, add corn starch one tbsp. at a time and stir-the sauce will slowly thicken over 3 to 4 minutes
  • Salt and pepper to taste, serve over the pasta, sprinkle with parmesan cheese, enjoy!

1/4 cup extra-virgin olive oil
1 pound mushrooms (such as button, maitake, oyster, cremini, and/or shiitake), torn or sliced into bite-size pieces
Kosher salt and freshly ground black pepper
4 tablespoons unsalted butter
1/2 large white onion, thinly sliced
2 cloves garlic, finely grated
1 serrano chile, stemmed and thinly sliced
1 pound fresh spinach (preferably mature), cut or torn into large pieces
1 pound bucatini or other pasta
3/4 cup crema or heavy cream
1 cup basil leaves, plus more for serving
1/2 cup finely grated Parmesan, plus more for serving

Steps:

  • Bring a large pot of salted water to a boil.
  • Heat the olive oil in a large heavy pot over high heat. Cook the mushrooms, undisturbed, until browned underneath, 3 to 4 minutes. Toss and continue to cook, until browned on both sides and tender, 4 to 5 minutes more. Season with salt and pepper and transfer to a medium heatproof bowl.
  • Reduce the heat to medium and add the butter, onion, garlic and serrano and cook, stirring often, until the onions are translucent and softened, about 6 minutes. Add the spinach and 1/4 cup water, cover and cook until the spinach is wilted, about 5 minutes. Return the mushrooms to pot.
  • Meanwhile, boil the pasta, stirring occasionally, until just under al dente, about 2 minutes less than the package directs.
  • Reserve 3/4 cup of the pasta cooking liquid and drain the pasta. Transfer the pasta and reserved cooking liquid to the pot with the spinach and mushrooms and add the crema. Bring to a boil and reduce to a simmer over medium heat, tossing the pasta constantly, until the pasta has fully cooked through and has absorbed some of the liquid, about 3 minutes. The sauce should be thick and creamy and will continue to thicken as it sits.
  • Remove the pot from the heat. Add the 1 cup basil, 1/2 cup Parmesan and 1/4 teaspoon pepper and toss to combine. Taste and season with more salt, if needed.
  • Divide the pasta among bowls and top with more Parmesan and basil leaves.

3 cloves garlic, minced, divided

1 teaspoon herbes de provence
1 1/2 cups milk
salt and pepper to taste
3 tablespoons olive oil
additional 1/4 cup water, broth, milk or cream (optional)
1/4 cup fresh parsley (more to taste)

Steps:

  • Pasta: Cook the pasta according to package directions. Set aside and toss with a little oil to prevent sticking. Mushrooms: Melt 2 tablespoons of butter over medium high heat. Add one clove of the garlic and saute for a minute until fragrant. Add the mushrooms and sauté for 5-10 minutes, until golden brown and softened. Set aside. Sauce: Add the remaining 2 tablespoons of butter to the pan and melt again over medium high heat. Add the garlic and saute for a minute until fragrant. Add the flour and herbes de provence. 2 tablespoons olive oil
¾ pound fresh white mushrooms, sliced
¼ pound fresh shiitake mushrooms, stemmed and sliced

2 fluid ounces sherry
1 cup chicken stock
1 cup heavy whipping cream
8 ounces fettuccine pasta
1 ½ teaspoons chopped fresh thyme
1 ½ teaspoons chopped fresh chives
1 ½ teaspoons chopped fresh tarragon
9 tablespoons freshly shredded Parmigiano-Reggiano cheese, divided

Steps:

  • Heat olive oil in a large skillet over medium heat. Cook and stir white and shiitake mushrooms in the hot oil with a pinch of salt until until the juice from the mushrooms evaporates and the mushrooms are browned, about 10 minutes.
  • Stir garlic into mushrooms and cook for 1 minute; pour in sherry and cook until wine is nearly evaporated. Mix chicken stock into mushroom mixture; season with salt and black pepper. Bring to a simmer, reduce heat, and cook until slightly thickened, about 5 minutes.

  • In a large skillet melt 2 tbsp of butter over medium heat and saute mushrooms until soft and brown. Season with salt and pepper.
  • Reserve cooked mushrooms and melt remaining butter in the skillet. Add minced garlic, cream cheese, and herbs. At this point, I generally feel like something has gone terribly wrong. The cream cheese doesn't really melt and starts to look almost curdled, don't worry about it! It will all smooth out and be wonderful when we add the water. I promise.
  • Simmer cream cheese mixture until well blended. Get a scoop of boiling pasta water from your noodle pot and mix it in, stirring quickly to smooth out the sauce.
  • Keep sauce hot and add shrimp and mushrooms, mix well and simmer (stirring often) until everything is hot and thickened, about 10 minutes-you wont ruin this sauce by accidentally boiling it so don't worry.
  • Toss sauce with cooked noodles and serve.
  • Sprinkle with Parmesan Cheese & salt, to taste.

1 lb penne pasta
1/4 cup olive oil
3/4 lb shrimp, peeled and deveined
10 ounces mushrooms
3 garlic cloves
1/4 cup white wine
8 ounces lump crabmeat
3/4 cup heavy cream
2 teaspoons lemon zest
1 tablespoon lemon juice
2 teaspoons rosemary
3 tablespoons unsalted butter
salt, pepper, and parmesan cheese to taste

Steps:

  • Slice the mushrooms. Mince the garlic.
  • Cook the pasta until al dente. Drain, reserving 1 cup of the cooking water. Set aside.
  • Heat the oil in a large skillet over medium-high heat. Add the shrimp and cook until just pink, about 2 minutes. Transfer to a large bowl.
  • Add the mushrooms to the oil in the pan. Saute about 5 minutes. Add garlic and cook 1 minute longer. Add the wine and cook until about half is absorbed, stirring and scraping browned bits from the bottom of the pan.
  • Return the shrimp to the skillet and add the crabmeat and cream. Simmer about 2 minutes until sauce thickens slightly. Add lemon zest and juice, rosemary, and salt and pepper. Stir in the butter until melted.
  • Add the penne to the skillet and heat through, adding some of the reserved pasta water if needed to keep everything moist. Remove from heat.
  • Serve immediately garnished with parmesan cheese.

Can be made really vegetarian with vegetable stock in place of the beef stock. Serve with your favorite sauteed green or simple green salad for a full meal.

8 ounces egg noodles, wide ones
2 tablespoons olive oil
1 garlic clove, diced
1/2 lb button mushroom, sliced
30 sage leaves, fresh medium
1 cup slivered almonds
1/2 cup medium-dry sherry
1 cup beef stock (vegetable stock for vegetarian)
1/2 cup light cream
sea salt, to taste
black pepper, freshly-ground, to taste
1 cup parmesan cheese, grated

Steps:

  • Cook the pasta in salted water according to package directions (about 8 minutes).
  • While the pasta cooks, saute mushrooms in olive oil until lightly browned.
  • Add the sage leaves, almonds and garlic and cook about 2 minutes.
  • Add sherry, stock, cream, salt and pepper.
  • Cook 3-4 minutes until slightly thickened.
  • Add the cooked, drained pasta to the pan. Mix together, cover with shredded Parmesan and serve.

375 g pasta (I use shells, penne or rigatoni)
2 chicken breasts, diced
1 medium onion, sliced
200 -250 g mushrooms, sliced
1/4 teaspoon ground chili powder
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 cup of liquid chicken stock
300 ml thickened cream
2 teaspoons coarse grain mustard
olive oil
shaved parmesan cheese

Steps:

  • Cook pasta until cooked, drain and return to the pan.
  • In a large frypan, add olive oil and fry the onion until translucent, add chicken, chilli, basil and oregano and cook until browned. Remove from pan.
  • In the same pan add mushrooms and cook until tender.
  • Add chicken stock, cream and mustard and return the chicken and onion mixture to the pan.
  • Bring to boil. Bring to boil, reduce heat and simmer until chicken is cooked through and the sauce is thickening.
  • Add the chicken sauce to the pasta and fold through.
  • Top with shaved parmesan cheese.

1 tablespoon olive oil
1 tablespoon butter
4 fresh mushrooms, sliced

1 tablespoon cornstarch

  • Bring a large pot of lightly salted water to a boil. Add pasta and olive oil. Cook for 7 minutes, or until tender. Drain.
  • Meanwhile, melt butter in a skillet over low heat. Add the mushrooms, and cook until soft and dark. Stir in the garlic, Italian seasoning, salt, white wine, and chicken broth. Increase the heat to medium, and cook stirring constantly for about 5 minutes.

2 tablespoons olive oil
10 big or 20 small shrimp without shells and de-veined, fresh or frozen
3 garlic cloves
Dried basil
Salt
Crushed red pepper flakes
Paprika
8 ounces mushrooms, thinly sliced
1 cup half and half
1/2 cup Parmesan cheese, shredded
3/4 cup Mozzarella cheese, shredded
Cooked pasta water
8 ounces fettuccine pasta

Steps:

  • Heat a large skillet until hot - add olive oil and immediately add garlic and shrimp. Cook on one side for about 1 minute until pink, on medium-high heat. Flip the shrimp to the other side, sprinkle the top of cooked side of shrimp with dry basil, paprika and salt, cook for another 1 to 2 minutes, occasionally stirring until shrimp is pink on both sides. Remove the shrimp from skillet. To the same skillet, add sliced mushrooms. Add more olive oil if necessary. Cook on high heat for about 2 minutes, occasionally stirring, until mushrooms become soft and release juices. Salt midway through cooking. To the skillet with mushrooms, add cooked shrimp. Immediately add 1 cup half and half and all of the cheese. Bring to a boil, then reduce to simmer and cook, constantly stirring, until all cheese melts. Cover with lid and remove from heat. Cook pasta. Reserve the pasta water when draining. Add pasta to the skillet with shrimp and mushrooms and cream sauce. Stir well, season with more salt, more crushed red pepper flakes and basil, if desired. Add pasta water to loosen the mixture to desired consistency.
