1 1/2 pounds chicken breasts (pounded to 1/2 inch thick)
Salt and pepper (to taste)
1 tablespoon oil
1 tablespoon butter
2 cups broccoli florets (cut into 1-inch pieces)
4 ounces mushrooms (sliced)
1/2 teaspoon garlic (minced)
1 1/4 cups half-and-half cream
1/3 cup Parmesan cheese (shredded)

Steps:

  • Heat oil in a large skillet over medium-high heat. Season chicken with salt and pepper on both sides and cook 3-4 minutes per side until cooked through and to 165 degrees F. Remove from pan.
  • Melt the butter in the skillet over medium heat and add the broccoli and mushrooms. Stir-fry until the broccoli is almost tender. Add the garlic and cook another 30 seconds.

1/2 teaspoon dried oregano, crumbled
1/2 teaspoon dried basil, crumbled
3 tablespoons olive oil
1 small onion, chopped
2 minced fresh garlic cloves (or to taste)
2 cups sliced fresh mushrooms
3 cups broccoli florets
1 cup cream
1 1/2 teaspoons Dijon mustard
1/2 cup grated parmesan cheese
1/2 cup minced fresh parsley

Steps:

2/3 cup white wine, dry
2/3 cup chicken broth, reduced sodium
