- Preheat oven to 375 degrees. Rub the bottom and sides of a 3-quart baking dish with garlic; reserve garlic. Brush pan generously with butter. Peel potatoes, then cut into 1/8-inch-thick rounds.
- Transfer potatoes and garlic to a large pot with cream, milk, thyme, 1 tablespoon salt, 1/2 teaspoon pepper, and nutmeg. Bring to a boil over high. Reduce heat to medium and simmer 1 minute. Let cool slightly, about 10 minutes.
- Spoon one-third of potato mixture into prepared dish. Sprinkle with one-third of cheese. Repeat layering twice more. Loosely cover dish with parchment-lined foil.

- Preheat oven to 400 degrees F (200 degrees C). Grease a 1-quart casserole dish.
- Spread about 1/3 of the potatoes into the bottom of the prepared dish. Mix flour and salt together in a bowl; sprinkle about 1/3 of the mixture over the potatoes. Dot potato layer with about 1/3 of the butter. Sprinkle about 1/3 of the onion over the potatoes. Repeat layering twice more.

SCALLOPED POTATOES FOR TWO
Since I sometimes have to cook for just me, I've been on a search for recipes that make enough for just one or two people. So when I came across this one in the TOH 2002 Annual Recipes that was sent in to them by Edith Jennings of Prarie City, Iowa, I knew I had to try it.The time for peeling the potatoes has been included in the prep time. I guess if you wanted to speed up the time it takes to prepare this recipe, you could slightly cook the potatoes in the microwave or on the stove top. The addition of the French Fried Onions was my idea. Sumitted to " ZAAR " on October 21, 2009.

Steps:
- Place potatoes in a greased 1 quart baking dish, set aside.
- In a small pan, melt margarine and then add flour cook until the flour taste disappears ( About 3 to 4 minutes ).
- Add the milk a little at a time, bring to a boil then reduce heat and stir until slightly thickened.
- Add cheese,salt, pepper, and worcestershire sauce and stir until cheese is melted.
- Cool sauce slightly, pour over potatoes.
- Cover potatoes and bake for 25 minutes at 375 degrees, remove cover and top with french fried onion, and paprika.
- Bake for another 20 minutes or until potatoes are fork tender.
- Let " rest " for 10 minutes, so sauce will thicken.

- Set oven to 375 degrees (oven rack set to second-lowest position).
- Grease a 13 x 9-inch baking dish (or larger).
- For the sauce; melt butter in a medium heavy-bottomed saucepan over medium heat; add in onion and garlic and saute for 3 minutes.
- Add in flour and whisk 1 minute.
- Slowly add in half and half cream and cook stirring until thickened, smooth and bubbly.
- Add in seasoned salt, black pepper and cayenne.
- Reduce heat to low and mix in the cheddar cheese, Swiss cheese and 1/4 cup parmesan cheese; stir with a wooden spoon until the the cheese has melted and the mixture is smooth (about 1-2 minutes) remove from heat.
- Layer the potatoes into the baking dish (does not have to be in an even layer).
- Pour the cheese sauce over, then mix the sauce using a spatula or a wooden spoon to coat the sauce with the potatoes.
- Sprinkle with 1/2 cup grated Parmesan cheese (or to taste).
- Bake covered for about 30 minutes.
- Remove foil and continue to bake until the top is browned and the potatoes are tender About 35-40 minutes (baking time will vary depending on the size of the potato slices).

EASY MICROWAVE SCALLOPED POTATOES
This came from a recipe book given to me by my grandmother-in-law. I like it because it cooks in about 1/2 the time of regular (oven) scalloped potatoes, and tastes basically the same. Great for weeknights when time is at a premium, or if you have no room in the oven. (Note, I noticed other recipes for scalloped potatoes call for cheese or other ingredients - this is scalloped potatoes like my mom used to make, basically just white sauce and potatoes. We always eat ours with lots of ketchup on top!)

- Put margarine (or butter) into LARGE glass bowl, and microwave on High for 1 minute, or until melted. (If you really like cleaning your microwave, feel free to use a smaller bowl.).
- Blend in flour, salt & pepper. Gradually stir in milk.
- Microwave on High 8-10 minutes, stirring after 4 minutes.
