8 (6 inch) yellow corn tortillas, torn into bite-size pieces
1 teaspoon taco seasoning mix, or more to taste
1 large tomato, chopped
1 ½ cups shredded Mexican-style cheese blend, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.

1 pound lean ground beef
2 cups salsa
1 (16 ounce) can chili beans, drained
3 cups tortilla chips, crushed
2 cups sour cream
1 (2 ounce) can sliced black olives, drained
½ cup chopped green onion
½ cup chopped fresh tomato
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

3 cooked chicken breasts, diced or shredded (about 2 cups)
1 cup salsa (your favorite)
4 ounces cream cheese (1/2 cup)
2 ounces canned diced green chiles (half of a 4-ounce can; use the whole can for more kick)
7.5 ounces canned black beans (half a 15-ounce can, drained and rinsed)
1 cup crushed tortilla chips
1 cup sour cream
1 medium sized tomato (diced)
2 green onions (sliced)
2 cups shredded cheddar/jack cheese

Steps:

  • Preheat your oven to 350 degrees and prepare an 8" square or round dish.

1-1/2 pounds ground beef
1 envelope taco seasoning
3/4 cup water
1 can (16 ounces) refried beans
1/2 cup salsa
6 flour tortillas (6 inches)
2 cups frozen corn, thawed
2 cups shredded cheddar cheese
Optional: Shredded lettuce, chopped tomatoes, sliced ripe olives and sour cream
