1 cup sour cream
1 1/2 to 2 cups milk, warm
2 tablespoons sliced chives

  • Toss the potatoes, butter, 1 tablespoon salt and 1/2 teaspoon pepper together in a 6-quart slow cooker. Add 1 cup of water, then cover and cook on high until the potatoes are tender, about 4 hours. (The potatoes might have browned lightly in spots but that is okay.)
  • Remove the lid and add the sour cream and 1 1/2 cups warm milk to the potatoes. Use a potato masher to smash the potatoes until they are mostly smooth. 1 (8 ounce) package cream cheese, softened
½ cup half-and-half, or more as needed
2 egg whites, slightly beaten
⅓ cup chopped fresh chives
2 teaspoons onion powder
nonstick cooking spray
salt and ground black pepper to taste
¾ cup butter, divided

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil over high heat. Reduce heat to medium-low and simmer until fork tender, 20 to 25 minutes. Drain water and place pot with potatoes back over medium heat until potatoes are dry, 1 to 2 minutes.

1 1/2 c chicken broth, low salt (can use water or half water, half broth)
1 c butter, cut into chunks
1 Tbsp salt

1 1/3 c milk, slightly warmed
