An easy, silky, and decadent creamy pasta sauce that can be varied in all sorts of ways. This version is flavored with smoked black pepper and garlic. As written, this recipe serves two for a romantic meal. The sauce doubles easily and you will probably have enough to nicely sauce 12 oz of pasta. Since the sauce is really rich, it should serve 4-5 people.

Number Of Ingredients 10

1 cup heavy cream
3/8 teaspoon salt
1/4 teaspoon cracked smoked black pepper (or regular)
1/4 teaspoon freeze dried garlic (or 1/2 clove garlic, sliced)
.75 oz (1.5 Tablespoons) cream cheese
.75 oz Asiago cheese, finely grated
4 oz fettuccine or pasta of choice
1/4 cup reserved cooking water from the pasta (you may not use all of it)
4 oz chicken tenders, sauteed in a bit of olive oil, salt and pepper
salt and smoked black pepper (or regular) to taste

Steps:

  • Place the heavy cream, salt, black pepper, garlic, and cream cheese in a wide sauce pan.
  • Turn the heat to medium high, and stirring frequently, bring the mixture up to a full boil. Boil a few minutes until the sauce thickens to coat your spoon or spatula.
  • Remove from heat and add the finely grated cheese and stir until completely melted and smooth.
  • Taste and adjust seasonings if necessary. Set aside.
  • NOTE If using fresh garlic, strain the sauce to remove the slices
  • Bring a large pot of water to a boil.
  • Salt it liberally, and then add the pasta.
  • Boil about 2 minutes less than the package states.
  • Once the pasta has just about cooked, dip out 1/4 cup of the cooking water with a measuring cup and set aside.
  • Drain the pasta and return to the pot.
  • Pour/scrape in the pasta sauce and about half the cooking water.
  • Cook over medium-high heat, stirring gently so you don't break up the pasta.
  • If the mixture seems a little dry, add an additional tablespoon or two of cooking water.
  • Boil the pasta in the sauce, stirring constantly (gently), until the sauce has thickened back up and coats the pasta beautifully.
  • Serve immediately with a bit extra smoked black pepper and some flaky salt for garnish.

This is one of my favorite quick and easy meals. I like lots of sauce, but if you don't, then use the larger amount of pasta.

water to boil pasta
1 teaspoon(s) salt for pasta water
1 jar(s) roasted garlic parmesan alfredo sauce (i like prego brand)
1 cup(s) baby salad shrimp, frozen
1/4-1/3 pound(s) linguine, uncooked
2-3 tablespoon(s) shaved fresh parmesan cheese

Steps:

  • Over high heat, bring a 3 quart saucepan of water to a boil; add one teaspoon salt, then add linguine; return to boil, lower heat to medium high and boil for 11 minutes.
  • While pasta is boiling, pour jar of sauce into a medium saucepan, add 1 cup frozen baby shrimp. Simmer over medium heat, stirring frequently, until shrimp are hot. Lower heat to barely simmer, stirring frequently, until the pasta is ready.
  • Drain pasta, then pour the pasta into the shrimp sauce. Mix until pasta is covered in sauce and shrimp is evenly distributed
  • Pour the mixture into serving bowl/plate, sprinkle with fresh parmesan shavings. Serve immediately.
  • Recipe may be doubled.

1/2 pound thick-sliced bacon strips, chopped
1 pound ground turkey
1 medium onion, chopped
2 garlic cloves, minced
1 carton (32 ounces) unsalted chicken stock
2 cans (14-1/2 ounces each) diced tomatoes with basil, oregano and garlic, undrained
1/4 teaspoon salt
12 ounces uncooked linguine
4 ounces cream cheese, cubed
1/2 cup chopped fresh parsley

Steps:

  • In a Dutch oven, cook bacon over medium-high heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings., In same pan, cook and crumble turkey with onion and garlic over medium-high heat until no longer pink, 5-7 minutes. Stir in stock, tomatoes and salt; bring to a boil. Stir in linguine and half of the bacon; bring to a boil. Reduce heat; simmer, covered, until linguine is al dente, 9-10 minutes., Stir in cream cheese until melted; stir in parsley. Let stand 5 minutes. Sprinkle with remaining bacon.
