CREAMY LEEK SOUP

Creamy Leek Soup image

I usually pair leeks with potatoes to make a creamy puree, but this time I used basmati rice, and the results are comforting and delicious. You could add something creamy to this if you wanted to - yogurt or milk or creme fraiche. But I found it utterly satisfying with no further enrichment.

Cream of Brie Soup image

Very tasty soup. Great as a starter or light lunch. So good served in hollowed-out large Kaiser rolls!

Provided by Sandra

Categories     Soups, Stews and Chili Recipes     Soup Recipes     Cream Soup Recipes

Time 55m

Yield 4

Number Of Ingredients 9

¼ cup butter
1 small onion, minced
3 stalks celery, chopped
¼ cup all-purpose flour
4 cups chicken stock
½ pound Brie cheese with the rind, cubed
½ cup heavy cream
1 tablespoon green bell pepper, cut into very fine matchsticks
1 tablespoon red bell pepper, cut into very fine matchsticks

Steps:

  • Melt the butter in a large saucepan over medium heat; cook the onions and celery until the onions are translucent, about 5 minutes. Stir in the flour, and cook for 3 minutes, stirring constantly. Gradually whisk in the chicken stock. Simmer until the celery is tender, about 20 minutes, stirring occasionally. Stir in the Brie cheese, and allow to melt for about 5 minutes.
  • Pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth, and pour into a clean pot. Heat the soup to almost simmering over medium-low heat. Pour in the cream. To serve, garnish with red and green pepper strips.

Tips:

  • Choose fresh, high-quality leeks. The fresher the leeks, the better the flavor of the soup will be. Look for leeks that are bright green and have firm, white bulbs.
  • Wash the leeks thoroughly. Leeks can be quite dirty, so it's important to wash them thoroughly before using them. Cut off the root ends and the dark green tops, then slice the leeks in half lengthwise and rinse them under cold water.
  • Use a good quality chicken broth. The chicken broth is the base of the soup, so it's important to use a good quality broth. Look for a broth that is made with real chicken and has a rich flavor.
  • Don't overcook the leeks. Leeks should be cooked until they are tender, but not mushy. Overcooked leeks will lose their flavor and texture.
  • Use a good quality Brie cheese. The Brie cheese is the star of the soup, so it's important to use a good quality cheese. Look for a Brie that is ripe and has a creamy, flavorful texture.
  • Serve the soup immediately. Leek and Brie soup is best served immediately after it is made. The longer it sits, the more the flavor of the Brie will mellow.

Conclusion:

Creamy leek soup with Brie is a delicious and sophisticated soup that is perfect for a special occasion. It is easy to make and can be tailored to your own taste. Whether you like your soup thick or thin, cheesy or not, this recipe is sure to please. So next time you're looking for a new soup recipe to try, give this one a try. You won't be disappointed!
