Yield Serves 8

Number Of Ingredients 7

1/2 cup heavy cream
2 tablespoons fresh lemon juice
1 tablespoon coarse-grained mustard
3 tablespoons finely chopped fresh parsley leaves
1/2 teaspoon sugar
2 bunches kohlrabi (about 2 pounds), bulbs peeled and cut into julienne strips, stems discarded, and the leaves reserved for another use
1 Granny Smith apple

Steps:

  • In a bowl whisk the cream until it holds soft peaks and whisk in the lemon juice, the mustard, the parsley, the sugar, and salt and pepper to taste. Stir in the kohlrabi strips and the apple, peeled, cored, and diced, and combine the salad well.

Tips:

  • Choose the right kohlrabi: Look for kohlrabi that are small, firm, and have smooth skin. Avoid any kohlrabi that are bruised or have blemishes.
  • Peel and dice the kohlrabi: Use a sharp knife to peel the kohlrabi, then dice it into small pieces. You can also use a food processor to dice the kohlrabi.
  • Salting the kohlrabi: Salting the kohlrabi helps to draw out excess moisture and make it more tender. Be sure to rinse the kohlrabi thoroughly after salting.
  • Use a good quality mayonnaise: The mayonnaise is one of the main ingredients in this salad, so it's important to use a good quality mayonnaise. Look for a mayonnaise that is made with real eggs and oil.
  • Add some crunch: Add some chopped nuts or seeds to the salad for some extra crunch. Walnuts, almonds, and sunflower seeds are all good choices.
  • Serve immediately or chill: This salad can be served immediately or chilled for later. If you're chilling the salad, be sure to bring it to room temperature before serving.

Conclusion:

This creamy kohlrabi salad is a delicious and healthy way to enjoy this versatile vegetable. It's perfect for a light lunch or dinner, and it's also a great side dish for grilled or roasted meats. With its creamy dressing, crunchy kohlrabi, and tangy red onions, this salad is sure to be a hit with everyone who tries it.
