2 packages (16 ounces each) multicolored spiral pasta
1 medium bunch broccoli, cut into florets
1 medium head cauliflower, cut into florets
2 cups frozen peas and carrots
2 cups cherry tomatoes, quartered
1 cup shredded Parmesan cheese
6 green onions, chopped
1/2 cup chopped green pepper
1 can (2-1/4 ounces) sliced ripe olives, drained
2 bottles (16 ounces each) creamy Italian salad dressing

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water. , In a large bowl, combine the pasta, broccoli, cauliflower, peas and carrots, tomatoes, cheese, onions, green pepper and olives. Add the dressing; mix well. Cover and refrigerate for 2-3 hours or until chilled.

I made this pasta salad 1st about 12 yrs ago and ever since then everyone's always begging me to make a HUGE bowl of it. It's that good. You can add other veggies if u like, but I found that w/ the minimal ones I have in this recipe, even the kids love it.

Number Of Ingredients 9

2 16 oz packages-multi-colored spiral pasta
1 medium bunch, fresh broccoli florets
1 l head, cauliflower, cut into florets
2 c quartered cherry tomatoes
1 c grated parmesan cheese, i used soy
6 large green onions, cleaned, chopped
1/2 c chopped green bell pepper
1 10 oz bag, frozen peas & carrots, thawed
2 16 oz bottles ken's lite creamy italian-peppercorn dressing

Steps:

  • 1. Cook pasta until done, drain & rinse in cold water. In a large bowl, combine broccoli florets, cauliflower florets, thawed peas & carrots and green bell pepper.
  • 2. With a large spoon, stir gently. Add cherry tomatoes, parmesan cheese & green onions. Add cooled pasta and gently stir in both bottles of dressing.
  • 3. Make sure to stir well so that all ingredients get some of the dressing. Cover well and refrigerate for 2 hrs.
