ITALIAN PAN-FRIED CHICKEN THIGHS WITH CREAMY TOMATO SAUCE

Italian Pan-Fried Chicken Thighs with Creamy Tomato Sauce image

This is a quick dinner that is ready in under 30 minutes. To save a little bit on the fat/calories I use a split ratio of cream and milk. This is not a requirement. Serve with your choice of sides. I like spaghetti noodles, or zucchini zoodles.

CREAMY WHITE WINE SAUCE AND ITALIAN CHICKEN OVER PASTA

Creamy White Wine Sauce and Italian Chicken over Pasta image

This is a super easy, ultra tasty recipe that calls for white wine, a packet of Italian dressing mix, chicken and pasta. Upon my first time making it, I already had leftover cooked chicken breast, so I made the sauce on the stovetop and let simmer for 20 minutes, chopped the chicken and added it to the sauce and served over pasta. I used 1-1/2 cups of white wine to yield a sauce that was a little more runny, but consistency is a matter of preference. I also used 2 freshly chopped roma tomatoes, rather than the sundried.

Categories     One Dish Meal

Time 1h15m

Yield 4-6 serving(s)

Number Of Ingredients 11

4 -6 chicken breasts
1/3 cup butter
2/3 cup white wine (Sauvignon Blanc works especially well due to the herbaceous character)
10 ounces cream of mushroom soup
4 ounces cream cheese
2 garlic cloves, minced
2 finely chopped green onions
4 ounces dried Italian salad dressing mix
16 ounces pasta, linguine works very well
sun-dried tomatoes or 2 freshly chopped roma tomatoes
parmesan cheese

Steps:

  • Preheat oven to 325 degrees. Melt butter in large pot and stir in package of Italian salad dressing mix and garlic. Next stir in wine, mushroom soup and cream cheese until well-blended. Continue to heat (without boiling) mixture for about 5 minutes, sauce should be creamy and all cream cheese should be melted. Place chicken in single layer in baking dish and pour the above mixture over. Cover and cook for 50-55 minutes. Cook pasta about 15 minutes before chicken is done. Drain pasta and serve chicken and sauce over the linguine. Top with tomatoes, chives and parmesan cheese. Don't forget to save some of the white wine to complement dinner!

CREAMY ITALIAN MUSHROOM CHICKEN

Creamy Italian Mushroom Chicken image

Got the inspiration for this recipe while lying in bed and wondering what in the world I was gonna to make for dinner the next day using ingredients I already had in the kitchen. This is amazing! Not one thing I, personally, would change about it!

Provided by Lesia Walker

Categories     Chicken

Number Of Ingredients 8

5 medium boneless, skinless chicken breast
2 pkg fresh mushrooms, sliced
2 can(s) cream of mushroom soup
3/4 c italian dressing (bottle)
3/4 c white wine
4 oz cream cheese
3 Tbsp butter
2 tsp chopped garlic

Steps:

  • 1. Wash and trim chicken. Wash and slice mushrooms. Place in crock-pot.
  • 2. Cut cream cheese and butter into smaller chunks and place on top of chicken and mushrooms then sprinkle garlic on top.
  • 3. In mixing bowl, combine soup, dressing and wine. Mix until smooth. Pour over chicken/mushroom mixture in crock-pot.
  • 4. Cook on high 4 to 5 hours. Serve over your favorite pasta.

Tips:

  • Prep your ingredients beforehand: This will make the cooking process smoother and faster.
  • Use fresh, high-quality ingredients: The better the ingredients, the tastier your dish will be.
  • Don't overcrowd the pan: When searing the chicken, make sure there is enough space between each piece so that they can brown evenly.
  • Cook the chicken until it reaches an internal temperature of 165°F (74°C): This will ensure that it is cooked through and safe to eat.
  • Let the chicken rest for a few minutes before serving: This will allow the juices to redistribute and make the meat more tender.
  • Serve the chicken with your favorite sides: Some popular options include mashed potatoes, rice, pasta, or vegetables.

Conclusion:

Creamy Italian Chicken is a delicious and versatile dish that can be easily tailored to your own preferences. Whether you like it mild or spicy, with or without mushrooms, or even with a different type of protein, this recipe is sure to please.
