A great dish for using up that leftover ham. This comes from TOH Country Soups and Stews 1999 by Maurine Kent of Texas. I have adapted slightly by adding swiss cheese and dill which I have shown as optional ingredients. This is really good soup, you will enjoy it.

Tips:

  • Fresh ingredients: For the best flavor, use fresh asparagus and ham. If you can't find fresh asparagus, frozen asparagus will work as well.
  • Use a good quality stock: The stock is the base of the soup, so it's important to use a good quality stock. You can use homemade stock or a store-bought stock.
  • Don't overcook the asparagus: Asparagus cooks quickly, so be careful not to overcook it. Overcooked asparagus will become mushy and lose its flavor.
  • Season to taste: Be sure to taste the soup and adjust the seasonings as needed. You may want to add more salt, pepper, or herbs.
  • Serve with crusty bread or crackers: This soup is perfect for serving with crusty bread or crackers for dipping.

Conclusion:

This creamy ham and asparagus soup is a delicious and easy-to-make soup that's perfect for a quick and easy weeknight meal. It's also a great way to use up leftover ham. The soup is creamy and flavorful, and the asparagus adds a nice touch of freshness. This soup is sure to be a hit with your family and friends.
