CREAMY GREEN BEANS AND MUSHROOMS
The two most important aspects of the classic to capture are the crispy onion topping and the creamy sauce. By roasting shallots with a bit of oil and tossing with crispy breadcrumbs you save the fat of the fried canned alternative. Low-fat milk, flavored with aromatics, and chicken broth thickened with a bit of flour make a creamy but light sauce that satisfies.

CREAMY LEMONY GREEN BEANS
I had no idea what lemon curd was for a while, then I found bottles of it on the clearance pile at Stop & Shop. It is an English delicacy that is used in both savory and sweet dishes, and enhances the flavors of meats and veggies as well as making for a sweet toast and pastry spread. Hence, I used my favorite vegetable to experiment with lemon curd. Whole and cut green beans work, I like them tender but not mushy.

- Trim the beans before cooking: Remove the tough ends of the beans and any strings that may be present.
- Blanch the beans before cooking: This will help to preserve their color and crispness.
- Use a heavy-bottomed pot: This will help to distribute the heat evenly and prevent the beans from sticking.
- Don't overcook the beans: Green beans should be cooked until they are tender but still have a bit of a bite to them.
- Season the beans to taste: Add salt, pepper, garlic, onion, or other herbs and spices to taste.
- Serve the beans immediately: Green beans are best served hot or warm.
