CLASSIC HOT CHOCOLATE

Classic Hot Chocolate image

This is a dark, rich and classic hot cocoa that's perfect for any snowy afternoon. Nondairy milk can be substituted for whole milk here, though you might have to reduce the sugar, since some brands are sweetened. Also bear in mind that the higher the cocoa percentage of the chocolate you use, the less sweet the drink will be. Add the sugar gradually, tasting as you go: Hot cocoa sweetness is a very personal thing.

Time 10m

Yield 4 servings

Number Of Ingredients 7

1/4 cup unsweetened cocoa powder, preferably Dutch-processed
3 cups whole milk
4 1/2 ounces chopped bittersweet chocolate or 3/4 cup bittersweet chocolate chips
1 to 3 tablespoons granulated sugar
Tiny pinch of fine sea salt
1 teaspoon vanilla extract
Whipped cream or marshmallows, for serving

Steps:

  • Fill a small pot with 1/3 cup water and bring to a boil. Whisk in cocoa; it may clump, which is O.K.
  • Reduce heat to medium and whisk in milk, whisking around the sides of the pan to help dissolve all the cocoa.
  • When milk simmers, whisk in the chocolate, 1 tablespoon sugar and a tiny pinch of salt, and reduce heat to low. Whisk until chocolate is melted and very smooth. Taste and add more sugar if you like. Turn off heat and whisk in vanilla.
  • Serve topped with whipped cream or marshmallows.

whipped cream
caramel sauce
Red and green sprinkle
chocolate sauce
mini marshmallow
Mini candy cane
Mini star cooky
Red and green chocolate-coated candy
Pirouette cooky
Peppermint bark
Chocolate-covered pretzel rod
Chocolate hazelnut sandwich cooky
Mini meringue
Brownie bite
4 cups milk, milk of choice
8 oz good quality white chocolate, chopped
kosher salt, tiny pinch
1 teaspoon peppermint extract, plus more to taste
1 batch Creamy Gourmet Hot Chocolate

Steps:

  • Assemble the hot chocolate board: Add the whipped cream, caramel sauce, red and green sprinkles, and chocolate sauce to small bowls of varying sizes and arrange on a large board or serving platter. Place a small spoon in each bowl.
  • Create a "river" of mini marshmallows diagonally across the center of the board, letting it "flow" around the curve of any bowl in its path. The river should be thickest at the center of the board and taper out at the ends.
  • Place a large handful each of mini candy canes, mini star cookies, red and green chocolate-coated candies, pirouette cookies, peppermint bark, chocolate-covered pretzel rods, chocolate hazelnut sandwich cookies, mini meringues, brownie bites around the board to fill.
  • Make the white peppermint hot chocolate: Add the milk, white chocolate, and salt to a medium pot. Bring to a bare simmer over medium heat and stir until the chocolate is melted, 5-10 minutes. Remove the pot from the heat, then stir in 1 teaspoon peppermint extract, adding more peppermint extract to taste.
  • Serve the white peppermint and classic hot chocolates in mugs with the board.
  • Enjoy!
