CREAMY GINGERED PINEAPPLE SALAD DRESSING
A quick an easy salad dressing. This is wonderful over grilled pork or a green salad with fresh citrus; as well as grilled chicken and seafood. The pineapple juice is just from a can of sliced pineapple (unsweetened), and I will use the pineapple as a garnish, often grilling it. Fresh ginger and the honey dijon mustard really makes a difference in this dressing.

Steps:
- Option -- You can use a mix of orange juice and pineapple rather than all pineapple if you think pineapple is too sweet. I happen to love it with the mustard and ginger. But you can mix the two if you prefer.
- Dressing -- Just add all the ingredients and whisk well to combine. Chill at least 30 minutes.
- Serve -- ENJOY! Serve over your favorite greens, pork, chicken, or seafood.

Tips:
- Use fresh pineapple: Fresh pineapple has a sweeter and more vibrant flavor than canned pineapple. If you're using canned pineapple, be sure to drain it well before using it in the dressing.
- Grate the ginger finely: Finely grated ginger will distribute its flavor more evenly throughout the dressing. You can use a microplane grater or a fine grater to grate the ginger.
- Use a good-quality mayonnaise: The mayonnaise is the base of the dressing, so it's important to use a good-quality mayonnaise. Look for a mayonnaise that is made with fresh, simple ingredients.
- Adjust the sweetness to your liking: The amount of sugar in the dressing is adjustable, so you can make it sweeter or less sweet depending on your preference. If you're using canned pineapple, you may not need to add any sugar at all.
- Serve the dressing immediately: The dressing is best served immediately after it's made. However, you can store it in the refrigerator for up to 3 days.
Conclusion:
This creamy gingery pineapple salad dressing is a delicious and versatile dressing that can be used on a variety of salads. It's also a great dipping sauce for chicken, shrimp, or tofu. The dressing is easy to make and can be tailored to your own personal taste. So next time you're looking for a new salad dressing, give this creamy gingery pineapple dressing a try!
