Categories     Onions

Time 1h30m

Yield 4-6 serving(s)

Number Of Ingredients 12

3 lbs tomatoes, cored (about 6 medium)
1 small cucumber, peeled, halved, and seeded
1 medium green bell pepper, halved, cored and seeded
1 small red onion, peeled and halved
2 medium garlic, peeled and quartered
1 serrano chili, stemmed and halved lengthwise
kosher salt
1 slice bread, crust removed, torn into 1-inch pieces
1/2 cup extra virgin olive oil (plus extra for garnish)
2 tablespoons sherry vinegar (or red wine vinegar, plus extra for garnish)
2 tablespoons parsley (chives, or basil leaves, finely minced)
ground black pepper

Steps:

  • Roughly chop 2 pounds of tomatoes, half of cucumber, half of bell pepper, and half of onion and place in large bowl. Add garlic, chile, and 1½ teaspoons salt; toss until well combined. Set aside.
  • Cut remaining tomatoes, cucumber, and pepper into ¼-inch dice; place vegetables in medium bowl. Mince remaining onion and add to diced vegetables. Toss with ½ teaspoon salt and transfer to fine-mesh strainer set over medium bowl. Set aside 1 hour.
  • Transfer drained diced vegetables to medium bowl and set aside. Add bread pieces to exuded liquid (there should be about ¼ cup) and soak 1 minute. Add soaked bread and any remaining liquid to roughly chopped vegetables and toss thoroughly to combine.
  • Transfer half of vegetable-bread mixture to blender and process 30 seconds. With blender running, slowly drizzle in ¼ cup oil and continue to blend until completely smooth, about 2 minutes. Strain soup through fine-mesh strainer into large bowl, using back of ladle or rubber spatula to press soup through strainer. Repeat with remaining vegetable-bread mixture and 1/4 cup olive oil.
  • Stir vinegar, minced herb, and half of diced vegetables into soup and season to taste with salt and black pepper. Cover and refrigerate overnight or for at least 2 hours to chill completely and develop flavors. Serve, passing remaining diced vegetables, olive oil, sherry vinegar, and black pepper separately.
  • Note: If kosher salt is not available, half the amount of table salt can be used.

AUTHENTIC GAZPACHO RECIPE

Authentic Gazpacho Recipe image

The best Spanish gazpacho recipe I've ever tried. This authentic gazpacho is a blend of different vegetables with olive oil, vinegar, and salt.

Provided by Lauren Aloise

Categories     Tapa

Time 15m

Number Of Ingredients 9

6-7 medium tomatoes
1 green Italian pepper (the long type, not a bell pepper)
1 cucumber
½ of a small white onion
1 clove of garlic (not too big)
1/4 cup Extra Virgin Olive Oil ((60 ml) again, quality is important)
A splash of Sherry vinegar (Vinagre de Jerez, although red or white wine vinegar can be substituted)
A pinch (or two of salt)
Optional toppings (For ex: diced green apple, diced onion, diced pepper, croutons, & hard-boiled eggs)

Steps:

  • Wash and dry all of the vegetables very well-if you prefer to peel the tomatoes you can, although I usually leave the skin on.
  • Cut the tomatoes into 4 slices (leaving the core behind) and put into your blender.
  • Halve, core, and de-seed the pepper. Cut it into a few slices and add to the blender.
  • Peel the garlic and slice it in half. Remove the core (which often results in bitterness when not cooked).
  • Cut the onion into a few slices and add it to the blender too.
  • Peel the cucumber and cut it in half. Add half to the blender and save the other half for a topping.
  • Blend the vegetables at a high speed until it is completely pureed.
  • Add the salt and vinegar and, while blending on a slow speed, slowly add the olive oil.
  • Taste and adjust salt and vinegar. If the texture is too thick for your liking add some cold water.
  • Refrigerate and serve VERY cold! Add as many (or as few) toppings as you like.

Gazpacho Andaluz (Spanish Cold Tomato Soup) Recipe image

This authentic Spanish gazpacho is a wonderful cold tomato soup recipe that is easy to make and absolutely delicious.

Provided by Lisa & Tony Sierra

Categories     Side Dish     Appetizer     Soup

Time 1h30m

Number Of Ingredients 17

For the Soup:
3 pounds very ripe tomatoes (peeled, seeded and coarsely chopped)
Optional : The insides (not the crusts) of a large, day-old white baguette
2 cucumbers (peeled, seeded, coarsely chopped)
1 small sweet onion (coarsely chopped )
3 cloves garlic (minced)
1 red bell pepper (or any sweet pepper -red makes the color more vibrant)
1 to 2 tablespoons sherry vinegar (or red-wine vinegar)
1/2 cup extra-virgin olive oil
Dash salt (or to taste)
Dash pepper (or to taste)
Optional Garnishes:
1/4 cup cucumber (chopped)
1/4 cup red pepper (chopped)
1/4 cup green apple (chopped)
1/2 cup croutons
1/2 cup hard-cooked egg (chopped)

Steps:

  • Gather the ingredients.
  • Bring a large pot of water to a boil over high heat. Prepare an ice bath. Set aside.
  • Meanwhile, cut a small "X" in the bottom of each tomato, this will help to loosen the skin while blanching. When the water boils , turn off heat, and submerge the tomatoes in the water, about 1 minute.
  • With a slotted spoon, transfer the tomatoes to the ice bath.
  • Once cool to the touch, remove the tomato skins, starting at the "X" for easy peeling. Discard skins.
  • Cut tomatoes in half and squeeze seeds into a small bowl. Discard seeds. Coarsely chop the tomatoes. Set aside.
  • Soak the bread in a few tablespoons of water for 1 minute. Gently squeeze dry.
  • Place the tomatoes, bread, cucumbers, onion, garlic, and pepper in a blender . Blend, in batches if necessary, until the mixture is smooth.
  • Add the vinegar and pulse until it is completely incorporated.
  • Some people prefer their gazpacho slightly chunky-it's a matter of personal taste. For a smoother texture, strain the gazpacho and discard the solids.
  • Drizzle the oil into the blender with the motor running until completely incorporated.
  • Pour the mixture into a large non-metallic bowl. Season with salt and pepper to taste, and more vinegar, if desired. Mix well, cover, and refrigerate for at least 1 hour.
  • Garnish each serving with the diced cucumber, bell pepper, apple, croutons, and egg, if desired.

GAZPACHO ANDALUZ

Gazpacho Andaluz image

This is Andalusia's signature dish.

Provided by Food Network

Categories     appetizer

Time 40m

Yield 4 servings

Number Of Ingredients 14

4 ounces day old bread, crusts removed, cut into 2 1/2-inch cubes
2 cloves garlic
2 pounds ripe tomatoes, about 5 to 6 medium tomatoes, seeded
1/4 teaspoon ground cumin
1 teaspoon salt
1/3 cup olive oil, preferably extra-virgin
2 tablespoons wine vinegar
1 1/2 cups water
Chopped green pepper
Chopped onion
Chopped cucumber
Croutons or diced bread, toasted crisp
Chopped hard boiled egg
Chopped tomatoes

Steps:

  • Put the bread in a bowl and add water to cover. Let soak for 5 minutes until softened. Squeeze out the water and place the bread in a blender container (or, if using a hand-held blender, into a mixing bowl) with the garlic. Blend until the bread and garlic are smooth.
  • To seed the tomatoes: cut out the stem and core, then cut the tomatoes in half crosswise. Either spoon out the seeds or else squeeze the tomatoes through a sieve placed over a bowl. The seeds will squeeze out; the juice will collect in the bowl. It is then ready to be added to the gazpacho as pulp.
  • Add the tomato pulp to the bread and garlic, and puree. Add the cumin and salt and, with the motor running, add the olive oil in a slow stream. As the oil is incorporated, the gazpacho will turn from red tomato-juice to a paler, peacher color. Blend in the vinegar. Thin the gazpacho with water to the desired consistency.
  • Place the blended contents in a tureen, bowl or pitcher. Chill until serving time.
  • Place each of the garnishes in separate small bowls or on a divided relish dish and pass them around the table when the gazpacho is served. Each person can add their desired spoonfuls on to their gazpacho.
  • This gazpacho can also be served, thinned with additional water, in tall glasses for sipping, without the garnishes.

CREAMY GAZPACHO

Creamy Gazpacho image

Provided by Kelsey Nixon

Time 2h10m

Yield 6 to 8 servings

Number Of Ingredients 11

2 cups white bread, preferably day-old (or toasted), crusts removed and torn
2 pounds ripe tomatoes, cored, seeded (reserve the seeds and tomato juice) and flesh roughly chopped
2 cloves garlic, grated
1 English cucumber, roughly chopped
1 small jalapeno, seeded and minced
1 red bell pepper, seeded and roughly chopped
1 yellow bell pepper, seeded and roughly chopped
1 large shallot, roughly chopped
1/4 cup sherry vinegar
2/3 cup extra-virgin olive oil, plus additional for serving
Kosher salt and freshly cracked black pepper

Steps:

  • Place the bread in a large bowl. Pour the reserved tomato juice over the stale bread and set it aside for at least 10 minutes. Not only will this soften the bread, but also infuse it with the tomato flavor.
  • In a food processor or a powerful blender, add all of the chopped vegetables. Puree the vegetables until they start to breakdown.
  • Add the bread and the sherry vinegar to the blender. Turn the blender on and stream in the olive oil. Puree the mixture until smooth. Taste and adjust the seasoning. If the consistency is too thick, add water or more vinegar if you like, to adjust the thickness. Place the gazpacho into the refrigerator to chill for at least 2 hours to allow flavors to marry with one another.
  • Serve the gazpacho in glasses, like they do in Spain, or you can serve it in bowls if you prefer.
  • Cook's Notes: To make your gazpacho spicier, add some of the ribs and seeds from the jalapeno. You can adjust the oil and vinegar in this recipe to make it tangier if you like!
  • Gazpacho gets better the longer that it sits.

REAL SPANISH GAZPACHO

Real Spanish Gazpacho image

The gazpacho is a recipe specially cooked in Andalusia, the south of Spain, and that's where I come from! Reviewing recipes in this page I have found gazpacho recipes that have nothing to do with what is made in Spain, so I've decided to share with all of you the real recipe of this delicious cold vegetable summer soup, which can be served as a beverage, as a side dish or even as a main one. I hope you all enjoy it!.

Categories     Vegetable

Time 10m

Yield 3-4 serving(s)

Number Of Ingredients 12

4 -5 large mature and juicy tomatoes
1 cucumber
1 italian pepper (red is preferred as it gives a more vivid colour to the gazpacho)
1 garlic, glove
1 loaf white bread
3 -4 tablespoons olive oil (to taste)
1 -2 tablespoon wine vinegar (sherry vinegar is preferred)
salt and pepper
minced hard-boiled egg (optional)
minced cured ham (optional)
toasted crouton (optional)
cucumber, cubes (optional)

Steps:

  • The first thing to do (after washing your hands lol) is to peel and deseed the tomatoes, garlic, pepper and cucumber.
  • Wet the bread with some water and put all the ingredients in a food processor. And that's it!
  • You can add water if you want your gazpacho more liquid, but I recommend you not to add too much. Also you can add some onion or/and more garlic to taste.
  • Refrigerate and serve cold (you can add ice instead of water).
  • This is the gazpacho recipe but it is usually eaten with toasted breadcrumbs,or/and minced boiled egg and minces cured ham, or even with some cucumber cubes.

Yield Makes 8 servings

Number Of Ingredients 13

3 medium tomatoes, peeled, seeded, and chopped (about 3 cups)
1 large cucumber, peeled, seeded, and chopped (about 2 cups)
1 red bell pepper, chopped (about 1 cup)
1 medium onion, chopped (about 11/4 cups)
3 cups canned tomato juice
2 tablespoons fresh herbs (such as tarragon, thyme, or parsley), chopped
1/4 cup red wine vinegar
2 cloves garlic, peeled and finely chopped
2 tablespoons tomato paste
Juice of 1/2 a lemon
Kosher salt
Cayenne pepper
1 cup croutons, to garnish

Steps:

  • 1. In a bowl, reserve 2 tablespoons each of the tomato, cucumber, pepper, and onion to garnish.
  • 2. In the food processor or blender, purée the remaining ingredients (except the croutons) until smooth, adjusting the seasoning to taste with lemon juice, salt, and cayenne pepper.
  • 3. Cover and chill thoroughly, at least 3 hours but preferably overnight. Adjust the consistency as desired with water. Serve in chilled bowls garnished with the reserved vegetables and croutons.

Tips:

  • Use ripe, flavorful tomatoes. The quality of your tomatoes will make a big difference in the final flavor of your gazpacho. Look for tomatoes that are deep red and have no blemishes.
  • Chill your ingredients before blending. This will help to create a smooth, creamy texture.
  • Use a high-powered blender. This will help to break down the ingredients and create a smooth soup.
  • Add the almonds and garlic gradually. This will help to prevent the soup from becoming too thick or gritty.
  • Taste the soup and adjust the seasonings as needed. You may need to add more salt, pepper, or vinegar to taste.
  • Serve the soup chilled, garnished with your favorite toppings. Some popular toppings include croutons, chopped hard-boiled eggs, and diced cucumbers.

Conclusion:

Creamy gazpacho Andaluz is a refreshing, flavorful soup that is perfect for a hot summer day. It is easy to make and can be tailored to your own taste preferences.
