MUSSELS IN A CREAMY WHITE WINE GARLIC SAUCE

Mussels in a Creamy White Wine Garlic Sauce image

Some people find the texture of mussels off-putting, but after they've been steaming away in a creamy, buttery sauce they soon start to get super delicious. The best part of a mussel dish always seems to be the same: that last bit of creamy sauce in the bottom of the bowl that gets soaked up with some warm crusty bread. The salty sea-ness from the mussels combined with your sauce always creates the perfect combination.

Time 30m

Number Of Ingredients 12

3 tablespoons (1 1/2 oz) butter
1 (8 oz) white onion (diced)
2 garlic cloves (chopped)
1 vegetable bouillon cube
Juice of 1/2 lemon (1 to 2 tablespoons)
4 pounds mussels (scrubbed and debearded)
1 1/4 cups dry white wine
1 generous cup heavy cream
Small handful of fresh curly parsley (chopped)
Freshly ground black pepper
Lemon wedges (for serving)
Crusty bread (for serving)

Steps:

  • In a large pot over medium heat, combine butter, onion, and garlic. Sauté until everything is soft, 6 to 10 minutes. Crumble in the vegetable bouillon cube and add the lemon juice.
  • Increase heat, toss in mussels and wine, and put the lid on the pot. The wine will make steam and start to cook the mussels. Cook until most of the mussels are open, about 3 minutes.
  • Reduce temperature to low and add heavy cream, parsley, and black pepper. Slowly bring up the temperature until the sauce starts to bubble-be careful when adding the cream because if it's too hot it can split.
  • Gently simmer until all of the mussels are open, about 2 minutes more. Discard any that refuse to open.
  • Serve with a wedge of lemon and lots of crusty bread.

Provided by David Tanis

Categories     easy, quick, main course

Time 30m

Yield 4 servings

Number Of Ingredients 7

2 tablespoons extra-virgin olive oil, plus more for toasts
2 garlic cloves, minced, plus 1 or 2 whole garlic cloves for rubbing toasts
Pinch of crushed red pepper
4 pounds mussels, cleaned
1/4 cup white wine or water
1 baguette, split lengthwise, then cut crosswise in half
1 cup roughly chopped parsley

Steps:

  • Heat broiler. Put olive oil in a large heavy-bottomed soup pot or Dutch oven over medium heat. Add the minced garlic and red pepper and let sizzle for 30 seconds without browning. Add the mussels, stir to coat and increase heat to high. Add the wine or water, and put on lid. After 2 minutes, give the mussels a stir, then replace lid and continue cooking until all mussels have opened, 6 to 8 minutes.
  • Paint cut sides of the baguette pieces with oil and place cut side up under broiler to toast. Rub toasts with the remaining garlic cloves.
  • Stir the chopped parsley into the mussels, then ladle mussels and broth into bowls. Serve with the garlic toasts.

Tips:

  • Choose fresh mussels. Look for mussels that are tightly closed and have a briny smell. Avoid any mussels that are open or have a foul odor.
  • Clean the mussels thoroughly. Use a stiff brush to scrub away any dirt or debris from the shells. Remove the beards by pulling them off with your fingers.
  • Steam the mussels in white wine. This is the classic way to cook mussels and it results in a delicious, flavorful broth. Add some aromatics, such as garlic, shallots, and thyme, to the white wine for extra flavor.
  • Cook the mussels until they are just cooked through. Overcooked mussels will become tough and rubbery. Mussels are cooked when they open up. Discard any mussels that do not open.
  • Serve the mussels immediately. Mussels are best served hot, straight from the pot. Serve them with crusty bread for dipping in the delicious broth.

Conclusion:

Creamy garlicky mussels are a delicious and easy-to-make seafood dish. They are perfect for a quick weeknight meal or a special occasion. With a few simple ingredients and a little bit of time, you can create a dish that will impress your family and friends. So next time you're looking for a delicious and affordable seafood dish, give creamy garlicky mussels a try. You won't be disappointed!
