2 tbsp heavy cream
3/4 cup parmesan cheese (shredded (divided))
8 oz mushrooms (chopped)
1/2 cup California Walnuts (chopped)

Steps:

  • Chop green beans in half and remove any hard ends.
  • In a large bowl, combine cream cheese, garlic, salt, pepper sour cream, heavy cream, 1/2 cup parmesan cheese, and chopped mushrooms and mix until combined.
  • Stir in the green beans and toss until coated with the mixture, then transfer to a large casserole dish.
  • Sprinkle remaining 1/4 cup parmesan cheese over the top of the casserole and then top with walnuts.

1 large onion
1/2 cup (62g) all-purpose flour (spoon & leveled)
3/4 cup (45g) Panko breadcrumbs*
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 large egg
1 Tablespoon (15ml) milk
1 Tablespoon + 1 teaspoon salt, divided
1 pound fresh green beans, rinsed, trimmed and halved
2 Tablespoons (30g) unsalted butter
8 ounces mushrooms, sliced into halves or quarters*
1/2 teaspoon ground black pepper
2 cloves garlic, minced (minced roasted garlic is great here)
2 Tablespoons (15g) all-purpose flour
3/4 cup (180ml) chicken or vegetable broth
1 and 1/4 cups (300ml) half-and-half*

Steps:

  • Preheat the oven to 475°F (246°C). Line a large baking sheet with parchment paper or a silicone baking mat. Set aside.
  • (while the onions bake, you can blanch the green beans- step 4.) Thinly slice the onion. Pour flour in one small bowl, Panko + salt + pepper into a medium bowl, and whisk the egg and milk together in another small bowl. To bread the onion slices, you'll want to use one hand for dry and one hand for wet. It helps things move a little quicker and easier. First, dip a few slices into the flour. Then into the egg mixture. And finally, give them a nice dunk into the Panko and coat them well. Place onto baking sheet. Repeat with the rest of the onions. Bake onions until golden brown, about 25 minutes. Flip them twice during this time. Set them aside.
  • Reduce oven to 400°F (204°C).
  • Bring a gallon of water and 1 Tablespoon of salt to a boil in a large saucepan. Add the beans and blanch for 5 minutes. Drain and immediately place into a large bowl filled with ice water to stop the cooking process. Drain again and set aside.
  • Over medium-high heat, melt the butter in a large 10 - 12 inch ovenproof skillet. Add the mushrooms, 1 teaspoon salt, and the pepper. Cook, stirring occasionally, until the mushrooms begin to give off some of their moisture- about 5 minutes. Add the garlic, stir, and cook for another 2 minutes. Sprinkle the flour on top and stir until combined. The flour will soak up all the moisture. Add the chicken broth and simmer for 3 minutes. Decrease the heat to medium-low and add the half-and-half. Stirring occasionally, cook until the mixture is thick- about 10 minutes or maybe more if you prefer a thicker sauce.
  • Remove from the heat and add 1/4 of the onions and all of the green beans. Give it a nice stir, combining the sauce and beans. Top with remaining onions and bake until bubbly, about 10-15 minutes. Remove from the oven and enjoy! Leftovers keep well in an airtight container in the refrigerator for up to 4 days. Reheat as desired.

This is my own version of Green Bean Casserole, It uses a different ingredient, but I think it's the best. I hope You will like it too :) This recipe is what I make for holidays, but you can certainly scale it down to suit the amount you want to make. It does make less than it seems though, especially if you use the French style green beans (not to mention how good left overs are). Exact measurements aren't really neccesary though so don't be afraid to make less or more. For one can beans I'd use 2oz cream cheese and 1/3 can of cream of chicken.

3 (11 ounce) cans French style green beans (the ones sliced the long way)
4 ounces cream cheese, softened to room temp
1 cup French-fried onions
1 (10 1/2 ounce) can cream of chicken soup
salt and pepper
1 pinch garlic powder

Steps:

  • Heat over to 350°F and grease a 9x9 or whatever sized dish you want to use. I don't suggest a 9X13 but anything smaller will do.
  • Drain green beans VERY well, and mix with softened cream cheese, the soup, a pinch of garlic powder and salt and pepper to your liking.
  • Add 1/2 cup of the french friend onions.
  • Pour into greased pan and cover loosely with foil. Bake for about 25 minutes Then remove cover and stir.
  • Add remaining french fried onions to the top and bake uncovered for another 20 to 30 minutes Until it's bubbly and looks done.
  • Cool for at least 5 minutes and enjoy! :).
