But it's a great light dinner dish for those hot summer nights when you don't feel like cooking or on those evenings when all you want is a refreshing and light meal. But we also have this year-round, and sometimes serving it warm with a bit of diced roasted chicken or proscuitto ham for a more substantial meal.

1 lb spaghetti or 1 lb fettuccine
2 tomatoes, diced
1 green pepper, seeded and diced
1 red pepper, seeded and diced
2 zucchini, diced
3 celery ribs, cut in 1/4 inch slices
2 carrots, cut in 1/4 inch slices
6 ounces sliced black olives, drained
1/4 cup olive oil
3 tablespoons parmesan cheese
2 teaspoons minced garlic
1 teaspoon basil
salt and pepper
shredded mozzarella cheese
1 1/2 cups cooked chicken, chopped (optional)

Steps:

  • In a large pot, cook pasta covered in boiling water, for 8 minutes or until limp. Set noodles aside in a colander to allow water to drain.
  • Lightly steam all of the vegetables just until they are starting to become tender. Remove them from the heat and let them cool a bit. Place all vegetables in a medium bowl and toss lightly.
  • In a separate small bowl, add the oil, cheese, garlic, basil, salt and pepper. Mix well.

Good olive oil
2 tablespoons minced garlic (6 cloves)
18 large basil leaves, julienned, plus extra for serving
1/2 teaspoon crushed red pepper flakes
Kosher salt
1/2 teaspoon freshly ground black pepper
1 pound dried angel hair pasta
1 1/2 cups freshly grated Parmesan cheese, plus extra for serving

Steps:

  • Combine the cherry tomatoes, 1/2 cup olive oil, garlic, basil leaves, red pepper flakes, 1 teaspoon salt, and the pepper in a large bowl. Cover with plastic wrap, and set aside at room temperature for about 4 hours.
  • Just before you're ready to serve, bring a large pot of water with a splash of olive oil and 2 tablespoons salt to a boil and add the pasta. 3 cloves garlic, minced
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons all-purpose flour
2 teaspoons chicken bouillon granules
1 teaspoon dried thyme
1/2 teaspoon dried basil
2 cups milk
1/2 cup shredded swiss cheese
1/2 cup shredded mozzarella cheese
2 tablespoons parmesan cheese

140g broccoli , cut into small florets
100g sugar snap pea , halved
2 courgettes , diced
1 tbsp olive oil
100g light cream cheese
50g grated parmesan (or vegetarian alternative), plus extra to serve
zest and juice 1 lemon
large handful basil

Steps:

  • Cook the penne according to pack instructions, adding the broccoli florets and sugar snap peas to the pan for the final 3 mins.
  • Meanwhile, gently fry the courgettes in oil for 7-8 mins until soft and tinged pale gold. When the penne and vegetables are almost ready, remove a ladleful of cooking water from the pan. Add 6 tbsp of this to the pan of courgettes, along with the cream cheese, Parmesan, lemon zest, half the lemon juice and seasoning. Stir to make a smooth, creamy sauce.
