Savor Ina Garten's pureed Cream of Fresh Tomato Soup recipe from Barefoot Contessa on Food Network using fresh vine-ripe tomatoes, rich cream and fresh basil.

Provided by Ina Garten

Time 1h15m

Yield 5 to 6 servings

Number Of Ingredients 13

3 tablespoons good olive oil
1 1/2 cups chopped red onions (2 onions)
2 carrots, unpeeled and chopped
1 tablespoon minced garlic (3 cloves)
4 pounds vine-ripened tomatoes, coarsely chopped (5 large)
1 1/2 teaspoons sugar
1 tablespoon tomato paste
1/4 cup packed chopped fresh basil leaves, plus julienned basil leaves, for garnish
3 cups chicken stock, preferably homemade
1 tablespoon kosher salt
2 teaspoons freshly ground black pepper
3/4 cup heavy cream
Croutons, for garnish

Steps:

  • Heat the olive oil in a large, heavy-bottomed pot over medium-low heat. Add the onions and carrots and saute for about 10 minutes, until very tender. Add the garlic and cook for 1 minute. Add the tomatoes, sugar, tomato paste, basil, chicken stock, salt, and pepper and stir well. Bring the soup to a boil, lower the heat, and simmer, uncovered, for 30 to 40 minutes, until the tomatoes are very tender.
  • Add the cream to the soup and process it through a food mill into a bowl, discarding only the dry pulp that's left. Reheat the soup over low heat just until hot and serve with julienned basil leaves and/or croutons.

2 tablespoons minced onions
2 cups calcium-enriched soymilk
1/2 teaspoon salt
1/8 teaspoon fresh ground black pepper

Steps:

  • Peel the tomatoes by dipping them in boiling water for about 30 seconds.

  • Add the onion and cook, stirring frequently, until soft and translucent, about 3 minutes.
  • Add the diced tomatoes, cover and cook, stirring occasionally, until the tomatoes are very soft, for about 20 minutes.
  • Remove from the heat and spoon the tomato mixture into a blender and puree.
  • Add the soy milk and all of the remaining ingredients to the blender and puree.
  • At this point you can pour the soup back into the saucepan and heat it to the desired temperature; or you can serve it at room temperature or refrigerate it and serve it cold.

CREAMY TOMATO AND SUMMER HERB SOUP

Creamy Tomato and Summer Herb Soup image

This creamy tomato and summer herb soup takes less than 25 minutes to prepare and can be served hot or cold. I prefer it hot. It is bursting with flavor and contains a full serving of vegetables in each bowl. Tarragon is the herb of choice in this version of the recipe, but chopped basil or even mint would work, too. While some creamy soups are made with heavy cream or sour cream, this one gets a rich, tangy flavor from a modest amount of reduced-fat sour cream. If you like, you can use low-fat plain yogurt instead. The soup is best when made with ripe tomatoes, but a 28-ounce can of diced tomatoes with their juices can be substituted in a pinch. For a complete light meal, serve this soup with a salad and a few slices of grilled whole-grain baguette.

Provided by CookingONTheSide

Categories     Low Protein

Time 25m

Yield 4 serving(s)

Number Of Ingredients 8

2 teaspoons extra virgin olive oil
1 medium sweet onion, chopped (about 1 cup)
4 large ripe tomatoes, diced (about 4 cups)
3/4 cup water
1/3 cup reduced-fat sour cream
1 tablespoon fresh tarragon, chopped
1/4 teaspoon salt
fresh ground black pepper, to taste

Steps:

  • In medium saucepan, heat the oil over medium.
  • Add the onion and saute until softened, about 4 minutes.
  • Add the tomatoes and water, then bring to a boil.
  • Reduce heat and simmer until the vegetables are tender, about 5 minutes.
  • Transfer the soup to a food processor or blender and puree until smooth, in batches, if necessary (use caution when blending hot liquids).
  • Set a strainer over the saucepan.
  • Pour the puree through the strainer, pressing on the solids with a wooden spoon or spatula to extract as much of the pulp as possible; discard the seeds and skin.
  • Whisk the sour cream and tarragon into the soup.
  • Stir over low heat until the soup is hot, but not boiling.
  • Season with salt and pepper.

Tips:

  • Select ripe, flavorful tomatoes: The quality of your tomatoes will greatly impact the taste of your soup. Look for tomatoes that are deep red and free of bruises or blemishes.
  • Roast your tomatoes: Roasting tomatoes intensifies their flavor and sweetness. You can roast them in the oven or on the stovetop.
  • Use a good quality broth: The broth is the base of your soup, so it's important to use a good quality one. Look for a broth that is flavorful and has a rich umami taste.
  • Don't overcook the soup: Creamy fresh tomato soup is best when it is slightly chunky. If you overcook it, the tomatoes will lose their texture and the soup will become bland.
  • Season to taste: Be sure to taste your soup as you're making it and adjust the seasonings accordingly. You may need to add more salt, pepper, or herbs to taste.

Conclusion:

Creamy fresh tomato soup is a delicious and versatile soup that can be enjoyed year-round. It's a great way to use up fresh tomatoes from your garden or local farmers market. This soup is also a good source of vitamins and minerals, making it a healthy and satisfying meal.
