TIM PERRY'S SOUP (CREAMY CURRY CAULIFLOWER AND BROCCOLI SOUP)

Tim Perry's Soup (Creamy Curry Cauliflower and Broccoli Soup) image

My boss brought this soup to the office one fine day and I was hooked on it from the first taste. It is a snap to make and the flavors are mild, yet very distinct. My kids loved it the first time I made it at home and it instantly became known as 'Tim Perry's Soup.' You might like a stronger curry flavour or a creamier soup, so adjust the seasonings to your taste. It's ready within the hour, but the longer it simmers the better the flavor. Serve with crusty bread and butter.

Tips:

  • Choose the right cauliflower: Select a head of cauliflower that is compact and heavy, with tightly closed florets. Avoid cauliflower with any brown or yellow spots, as this indicates age or bruising.
  • Roast the cauliflower before adding it to the soup: Roasting the cauliflower brings out its natural sweetness and caramelizes it slightly, adding depth of flavor to the soup.
  • Use a good quality curry paste: The curry paste is the backbone of the soup, so it's important to use a good quality one. Look for a paste that is made with fresh, flavorful ingredients and has a good balance of spices.
  • Don't be afraid to adjust the spices: The amount of curry paste and cayenne pepper in this recipe can be adjusted to taste. If you like your soup mild, start with a small amount of each and add more to taste. If you like it spicy, add more curry paste and cayenne pepper until it reaches your desired level of heat.
  • Serve with your favorite toppings: This soup is delicious on its own, but it can also be served with a variety of toppings, such as chopped cilantro, toasted almonds, or a dollop of yogurt.

Conclusion:

This creamy curry cauliflower soup is a delicious and easy-to-make meal that is perfect for a weeknight dinner or a casual lunch. It's packed with flavor and nutrients, and it can be easily customized to your taste. So next time you're looking for a comforting and satisfying soup, give this recipe a try.
