¾ cup orange juice
1 apple with peel, grated

1 (8 ounce) package cream cheese, softened

I found this recipe last week on another web site and being the cranberry lover that I am, I knew I had to make it for Thanksgiving. It was delicious and very well received.

12 oz pkg. fresh cranberries
1 c white sugar
6 oz pkg. red jello (cranberry, raspberry, cherry)
8 oz can crushed pineapple, drained
1 c apple with peel, grated
1 c chopped pecans
1 c whipping cream
8 oz cream cheese, softened
3/4 c orange juice

Steps:

  • 1. Process cranberries in blender or food processor (I use a small electric chopper); pour sugar over cranberries and stir to dissolve.
  • 2. Bring 3/4 cup water to a boil; stir in gelatin and let cool. Stir cooled gelatin into cranberries; add pineapple, orange juice; apple and pecans. Mix well; cover and refrigerate overnight.
  • 3. Whip cream and beat in cream cheese. In a glass serving dish, layer half of the cranberry mixture, then the whipped cream mixture, then the remaining cranberry mixture. This makes a festive looking presentation. I would even consider adding orange zest or mandarin oranges to this recipe. I used Cherry jello as my grocer didn't have cranberry but I would probably use Cranberry or Raspberry over the Cherry. ENJOY!
