1/4 cup butter

3 cups half-and-half
1 teaspoon chopped fresh thyme leaves or 1/2 teaspoon dried thyme leaves
1 teaspoon salt or to taste

1 dried bay leaf
Dash of ground nutmeg
Chopped fresh parsley, if desired

Steps:

  • In 4-quart Dutch oven, cook bacon over medium heat 7 to 10 minutes, turning once, until crisp. Drain on paper towels; leave bacon drippings in pan. When cool, crumble bacon and set aside.

2 tablespoons olive oil
1 medium yellow onion (diced) (about 2 cups diced)
2 tablespoons all-purpose flour
1/2 teaspoon dry mustard
1/4 teaspoon smoked paprika
1/8 teaspoon turmeric
1 teaspoon kosher salt + more to taste
1/4 teaspoon freshly ground black pepper + more to taste
2 cups low-sodium vegetable broth
1 (15-ounce) can lite coconut milk
1 pound Yukon gold potatoes (unpeeled, cut into 1/2-inch dice) (about 3 cups)
4 sprigs fresh thyme (or 1/2 teaspoon dried)
1 (16-ounce) bag frozen sweet corn kernels

Steps:

  • Set a medium soup pot over low heat. Add the olive oil and the onion. Sweat the onion - cook it low and slow - until tender and translucent, 10-12 minutes.
  • Increase the heat to medium-low and add the flour, dry mustard, smoked paprika, turmeric, and salt. Cook, stirring constantly, for 3 minutes.
  • Slowly add the vegetable broth and deglaze the pan, stirring up any cooked bits that are stuck to the pan. Add the coconut milk, potatoes, and thyme.

2 can(s) cream corn, 14-16 oz
2 can(s) evaporated milk, 12 oz each
1 lb bacon, cooked and crumbled
2 large carrots, chopped
1 large onion, chopped
6 large potatoes, chopped
3 Tbsp butter or margarine
6 c water or chicken broth
salt and pepper to taste

Steps:

  • 1. Place everything except for the evaporated milk and butter or margarine into the crockpot
  • 2. Add just enough water or chicken stock to cover the ingredients.
  • 3. Turn it on high for 6 hours, or on low for 8 hours, depending on your desired time-frame and crockpot settings.
  • 4. When ready to serve, gently stir in the evaporated milk and butter, and allow it to heat through.
  • 5. If Chowder is too thick for you, add a bit more water or chicken broth.
  • 6. Taste and adjust seasoning with salt and pepper to taste. If desired, add a sprinkle of cheddar or parmesan cheese.

1 medium white yam, peeled and rinsed

⅛ teaspoon rosemary
4 cups vegetable stock
2 cups coconut milk

1 teaspoon celery flakes

¼ cup quinoa flour
1 tablespoon onion powder

Creamy, filling, tasty and easy. That's what I love about it! This chowder is wonderful comfort food and perfect on a cold night. Would go great with crusty bread. Note: For those with gluten intolerances, just substitute gluten free flour for regular flour.

2 cups chicken broth
1 1/3 cups red potatoes, cubed and peeled
1 cup frozen corn
1/2 teaspoon fresh garlic, minced
1/4 teaspoon dried thyme
1/4 teaspoon pepper
4 tablespoons flour (use Gluten Free flour if needed)
1 1/3 cups milk (I use Skim)
4 ounces Velveeta cheese, cubed
1 lb boneless skinless chicken, cooked and cubed (I like to season the chicken with salt and pepper before cooking it)
salt, to taste

Steps:

  • In a large saucepan, combine the broth, potato, corn, garlic, thyme, and pepper.
  • Bring mixture to a boil. Then reduce heat; cover and simmer for 15-20 minutes or until potatoes are tender.
  • Combine flour and milk until smooth; gradually add to the vegetable mixture.
  • Bring mixture to a boil; cook and stir for 2 minutes or until slightly thickened. Reduce heat, then stir in cheese until melted.
  • Add the cooked chicken and keep the heat on low until everything is heated through.
  • Add salt to taste, and then it's ready to serve!

2 strips bacon (about 2 ounces), finely chopped
1 tablespoon unsalted butter
5 ounces shallots, minced (about 1 cup)
1/4 cup dry white wine
2 medium russet potatoes, peeled and cubed (about 2 1/2 cups)
2 cups corn kernels (from 2 to 3 ears)
1 small zucchini, cut into 1/2-inch cubes (about 1 cup)
4 cups chicken stock
1 thyme sprig
Coarse salt and freshly ground pepper
1/3 cup heavy cream

Steps:

  • Cook bacon in a medium stockpot over medium-high heat, stirring frequently, until light golden, about 5 minutes. Stir in butter until melted. Add shallot and cook, stirring occasionally, until translucent, about 3 minutes. Add wine; cook, stirring, until almost no liquid remains, about 45 seconds.
  • Add potatoes, corn, zucchini, stock, and thyme. Season with salt and pepper. Bring to a boil, then reduce to a simmer. Cook until potatoes are tender but not falling apart, 8 to 10 minutes. Increase heat to medium-high; add cream and heat 1 minute, then pulse a few times with an immersion blender, just until some of corn mixture is pureed. Season with salt and pepper; serve immediately.

Like all my recipes, this corn chowder is vegan and uses only fresh, whole food ingredients! I put this together because I wanted a delicious, thick, creamy slow cooker recipe for chilly fall days. It has become a family favorite, and is great for potlucks!

2 1/2 lbs potatoes, scrubbed and chopped
1 medium yellow onion, diced
1 yellow bell pepper, chopped
3 cups water
2 cups almond milk
2 vegan bouillon cubes (I use Edward and Sons)
6 -10 fresh garlic cloves, peeled
15 ounces garbanzo beans, drained or 1 1/2 cups garbanzo beans
1/4 cup nutritional yeast flakes
4 teaspoons sea salt
1/2 teaspoon ground black pepper
1 teaspoon dried rosemary
1/2 teaspoon dried oregano
2 cups almond milk
1 cup raw cashews
1 lb organic frozen corn

Steps:

  • Add first three ingredients to a large slow cooker, layered in the order they are listed (potatoes on the bottom, then onions and pepper on top).
  • Add the next ten ingredients to the blender and blend until smooth. Pour blended mixture over the potatoes, onions, and peppers. Cover and cook on low for 5-6 hours.
  • About one hour before you wish to serve the chowder, put the remaining two cups almond milk and the raw cashew pieces in your blender. Add several ladles full of the simmering chowder (about 3-4 cups worth), making sure to get lots of potatoes. Blend mixture until completely smooth (for Blendtec, use the "soup" button), then pour back into the slow cooker.
  • Add the frozen corn, stir, cover, and turn up to high for one hour. Serve with fresh, crusty bread or rolls!
  • NOTES: 1­) You may substitute 3 cups of veggie broth and omit the water and vegan bouillon cubes. 2­) If you are not concerned about calories or fat content, canned full fat coconut milk makes a wonderful substitute for the almond milk in this recipe (I do not recommend rice milk because it is too thin). 3­) For a smaller slow cooker, you may half this recipe.

6 thick slices of bacon cut into 1/2 inch crosswise.
1 lg onion chopped
2 lg carrots chopped
1 1/4 tsp dried thyme
3/4 tsp crushed dried rosemary
3 TBS all purpose flour
3 cups whole milk
1 cup heavy cream
1 8oz unpeeled white potato cut into 1/2 inch cubes
3 6 1/2oz cans of chopped clams in juice
1 10oz pkg of frozen whole kernel corn.
chopped Italian parsley

Steps:

  • Cook bacon in a large saucepan until crisp. Transfer bacon to a paper towel. Pour off all but 3 TBS of bacon drippings. Add next four ingredients to the pan, sprinkle with salt and pepper. Saute until vegetables are crips and tender. Sprinkle flour over vegetables and stir for 1 - 2 miunutes. Gradually add 3 cups of milk stirring continuously. Bring to a boil; reduce heat to medium and cook until slightly thickened (about 5 minutes) Add potatoes, clams with juice and thawed frozen corn. Bring to a boil and reduce to medium low and simmer until potatoes are tender, stiring often. Add 1 cup of cream and season with salt and pepper to taste. Divide soup among bowls and sprinkle with crisp bacon and parsley then serve.

4 ears of yellow sweet corn, raw
12 oz coconut cream
1 medium sweet onion, diced
1 medium red bell pepper, diced
4 clove garlic, minced
3 c sweet yellow corn
1/2 c celery, diced
1 large yukon potato
4 c vegetable broth, low sodium
1/4 tsp paprika
1/2 Tbsp coconut oil
1 tsp white pepper (or to taste)
1 pinch red pepper flakes
1/2 tsp coriander
1 tsp cumin
salt to taste

Steps:

  • 1. With a chef's knife, slice corn from corn cobs. Add corn to the other cups of corn, and set cobs to the side. Cube potato, set aside.
  • 2. Heat oil in a large saucepan. Saute onion, bell pepper, garlic, and celery until onion is translucent. Add spices to pot. Stir until spices are toasted.
  • 3. Add broth and deglaze pan.
  • 4. Add cobs to pot. Bring pot to a boil, then lower heat to a simmer. Simmer for 5 hours.
  • 5. Remove cobs from pot. Add potato and half of the corn to pot. Cook until tender.
  • 6. With a blender, add coconut cream and blend smooth. Add rest of corn to pot and cook until corn is cooked through. Salt pot to taste.

Tips:

  • Use fresh corn: Fresh corn on the cob is best for this chowder, but frozen or canned corn can also be used.
  • Don't overcook the corn: The corn should be cooked until it is tender but still has a slight crunch.
