- 1. Peel and remove seeds from cucumber. Dice cucumber. In blender, blend until smooth.
- 2. Blend remaining ingredients. Salt and pepper to taste. Chill.
- 3. Serve in chilled mugs. Garnish with fresh dill. Great to serve on hot summer evening on patio before dinner.

I tried this out the other night and it was so refreshing, I think we'll have this more often than just Friday nights during the summer! Prep time includes chilling (who wants lukewarm cuke soup?).

- Bring the vegetable broth to the boil.
