2 cups dried cooked chicken
1/2 cup thinly sliced red onion
1/3 to 1/2 cup (about) purchased poppy seed salad dressing

2 chicken breasts, boneless and skinless
1 cucumber, peeled, seeded, and diced
3 peaches, peeled, pitted, and diced
1/2 c red onion, diced*
1 c almonds, slivered
1/2 c mayonnaise
1/2 c sour cream
1 Tbsp fresh lemon juice
salt and pepper, to taste

  • 1. Toast the almonds: Place a single layer of nuts in a skillet. Over medium-low to medium heat, stirring constantly, toast until golden and fragrant. (Be careful not to burn them.) When cool store in an airtight container.
