2 tbsp butter (Alternatively use ghee or coconut oil )
2 onions (finely chopped)
2 celery spears (finely chopped)
2 carrots (peeled and finely chopped)
2 large leeks (finely chopped)
4 garlic cloves (crushed)
2 tsp crushed ginger
2 tsp ground turmeric
2 tsp curry powder
1 tsp ground cinnamon
1 tsp Chilli powder
1 tsp paprika
2 bay leaves
2 large potatoes (peeled and cubed)
6 cups chicken stock (1.5 liters)
4 chicken breasts (de-boned + skinless)
1 cup cream/coconut milk
salt (to taste)
pepper (to taste)
lemon juice (to taste)
Plain yoghurt (For serving)
Fresh coriander/cilantro (For serving)

Steps:

  • Melt the butter and a splash of oil(optional) in a large pot.
  • Add the onion, celery, leek and carrot and fry for 10 minutes until soft and fragrant.
  • Add the garlic and ginger and fry for a minute before adding the spices. Stir together.
  • Add the potato and fry for another minute before pouring in the chicken stock.
  • Season with salt and pepper, add the cream and allow to come to a simmer.
  • Add the chicken breasts then cover and allow to simmer for 7-10 mins until the chicken is cooked. Remove from the pot and allow to cool slightly.
  • Place the lid back on the pot and allow to simmer for another 10 minutes.
  • Shred the chicken and add back to the soup. Simmer for 5 minute then season to taste.
  • Serve with plain yoghurt and fresh coriander/cilantro.

1/2 teaspoon salt
1/2 teaspoon pepper

1 pound boneless skinless chicken breasts, cut into 1-inch cubes
3 medium carrots, chopped
1 medium sweet red pepper, chopped
1 small onion, chopped
2 tablespoons olive oil
1 garlic clove, minced
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1 can (14-1/2 ounces) chicken broth
1 can (14-1/2 ounces) diced tomatoes, drained
1 cup water

  • In a large shallow dish, combine the curry, salt, pepper and cayenne. In this dish, season sliced onions and chicken breast with the spice and finish the sauce with sour cream. The process is streamlined so that it takes no more than 25 minutes. Begin cooking white rice, the natural accompaniment, before cutting the onion. 2 tablespoons canola, corn or other neutral-flavored oil, plus more as needed
1 medium onion, peeled and sliced
Kosher salt and freshly ground black pepper to taste
1 1/2 teaspoons curry powder, or to taste
1 pound boneless, skinless chicken breasts, sliced diagonally ½ -inch thick
1 cup sour cream

Steps:

2 large bone-in chicken breasts, skin removed
1 tablespoon coconut oil
3 carrots, peeled and diced
1 onion, diced
1 red bell pepper, diced
1 cup cooked rice
3 tablespoons brown sugar

1 (14 ounce) can coconut milk
2 cubes chicken bouillon

Steps:

  • Combine water and chicken in a large pot over medium-high heat. Bring to a boil and cook until chicken is no longer pink at the bone and the juices run clear, about 30 minutes. Remove chicken from the pot, cut off meat from bones, and dice. Strain cooking broth through a sieve and set aside.

1 lemongrass stalk
1 whole star anise
1 tablespoon curry powder

2 anchovy fillets, minced, optional
2 tablespoons white wine vinegar
1 carton (32 ounces) chicken broth

Steps:

  • Cook noodles according to package directions for al dente. Meanwhile, in a Dutch oven, heat 1 tablespoon ghee over medium-high heat. Add chicken; cook and stir until no longer pink, 4-5 minutes. 1 onion , finely chopped
3 tbsp Thai red curry paste
2 x 400g cans coconut milk
400ml chicken stock
100g risotto rice
4 large eggs
about 200-300g leftover roast chicken , shredded
340g can sweetcorn , drained
2-3 limes , juiced
2 spring onions , sliced

Steps:

  • Heat the oil in a saucepan over a medium heat. Add the onion and fry for 10 mins or until softened and turning translucent. Add the curry paste and cook for 1 min. Stir in the coconut milk, chicken stock and risotto rice and bring to a simmer. Cook for 15-20 mins or until the rice is tender.
  • Bring a pan of water to a simmer, add the eggs and cook for 7 mins. Stir the chicken and sweetcorn into the soup and cook for 5 mins to warm everything through. Season to taste and finish with the lime juice. Gently peel the shells off the eggs and cut them in half. Top the soup with the eggs and spring onions.
