One-pot creamy chicken and mushroom pasta with peas image

Creamy chicken and mushroom pasta with peas is an easy, cheesy, one-pot pasta dinner that's ready in about 30 minutes!

Provided by Kathryn Doherty

Categories     Chicken

Time 35m

Number Of Ingredients 14

2 teaspoons extra-virgin olive oil
1 small onion, chopped
8 oz. button mushrooms, sliced
2 cloves garlic, minced
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 (1 lb.) box penne pasta (whole wheat, regular or gluten free are fine)
3 cups low-sodium chicken broth
4 oz. plain cream cheese (I use 1/3 reduced fat)
2 cups shredded mozzarella cheese
1 (10 oz.) bag frozen peas, thawed
2 cups cooked, shredded chicken (see notes)
1/4 cup fresh parsley, chopped (optional)
Shredded Parmesan cheese (optional)

Steps:

  • Heat olive oil in a large pot over medium heat. Add onion and mushrooms and saute for 7-8 minutes, until onions are tender and the mushrooms have released most of their liquid.
  • Add garlic, salt and pepper and saute for another 30 seconds.
  • Add pasta and chicken broth and bring to a boil.
  • Cover, reduce heat to medium-low and cook for 8-10 minutes, until most of the liquid is absorbed and the pasta is nearly cooked. I lift the lid and stir it once or twice during the cooking time so the pasta gets moved around and can cook evenly.
  • Add cream cheese and mozzarella cheese and stir until melted and well combined. You can add an extra splash of chicken broth if needed to get everything to mix well.
  • Add thawed peas and shredded chicken and stir to combine. Turn off heat, cover and let sit for a few minutes.
  • Taste and adjust seasonings.
  • Serve with fresh chopped parsley and Parmesan cheese (if using).

OLD-FASHIONED CHICKEN AND NOODLES

Old-Fashioned Chicken and Noodles image

This was a Sunday favorite when I was growing up. Sometimes my mother dipped the chicken in seasoned flour after boiling and fried it.

Provided by Roge

Categories     Main Dish Recipes     Pasta     Chicken

Time 1h50m

Yield 8

Number Of Ingredients 12

1 (2 to 3 pound) whole chicken, cut into pieces
4 stalks celery, diced
celery tops
1 carrot, shredded
1 onion, halved - unpeeled
ground black pepper to taste
3 (32 fluid ounce) containers chicken broth
2 eggs, beaten
1 cup warm water
2 tablespoons vegetable oil
1 teaspoon salt
3 cups all-purpose flour

Steps:

  • In a large pot over medium heat, combine chicken, celery and their tops, carrot, onion and its peel, and pepper. Pour broth over and bring to a boil. Cover, reduce heat and simmer until chicken is tender and falls from the bone, about 45 minutes.
  • While chicken is cooking, make noodles. In a large bowl, combine eggs, water, oil, salt and enough of the flour to make a stiff dough.
  • Strain chicken stock, reserving meat, celery and carrots. Pull meat from bones and return strained stock and meat, celery and carrots to pot. Bring to a boil. Make noodles by cutting dough from a broth-dipped spoon or using scissors or your fingers to make small, chickpea sized, noodles and dropping them in the boiling water. When the noodles rise to the surface they are done.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all your ingredients and tools ready. This will help you stay organized and prevent any scrambling during the cooking process.
  • Use Quality Ingredients: The fresher and higher quality your ingredients are, the better your dish will taste. Whenever possible, use organic, locally-sourced ingredients.
  • Don't Overcook the Chicken: Chicken is a delicate meat that can easily become dry and tough if overcooked. Cook it until it reaches an internal temperature of 165°F (74°C) for best results.
  • Season Generously: Don't be afraid to season your dish generously with salt and pepper. This will help to enhance the flavors of the other ingredients and create a well-balanced dish.
  • Adjust the Creaminess: The amount of cream you add to the sauce is up to your personal preference. If you like a richer, creamier sauce, add more cream. If you prefer a lighter sauce, use less cream.
  • Serve Immediately: Creamy chicken and peas is best served immediately after it is made. This will ensure that the chicken is still tender and juicy and the sauce is still hot and creamy.

Conclusion:

Creamy chicken and peas with noodles is a quick and easy weeknight meal that is sure to please the whole family. It is a versatile dish that can be easily customized to your liking.
