Comfort food at it's best! I don't usually measure when I make this dish, so the ingredients are approximations. You may need more or less of an ingredient to suit your tastes. If you want a cheesy dish, use the cheddar cheese soup, otherwise use the cream of mushroom to use as a creamy base.

1 (16 ounce) package o'brien frozen potatoes, thawed
1 cup sour cream
1 1/2 cups sharp cheddar cheese, shredded
1 (10 1/2 ounce) can cheddar cheese soup or 1 (10 1/2 ounce) can cream of mushroom soup
1 cup milk
salt
pepper
garlic powder
4 tablespoons butter

Steps:

  • Preheat oven to 350 degrees.
  • Season potatoes to taste.
  • Spray a casserole dish with non-stick cooking spray.
  • In a bowl, combine milk, soup and sour cream.
  • Combine potatoes with milk and soup mixture. Add 1 cup cheddar cheese.
  • Spread evenly into casserole dish and push a tblsp of butter into the mixture at 4 different places. This will help to prevent sticking while the dish cooks. Top with remaining cheese.
  • Bake for about 30-45 minutes or until cheese starts to brown.

1 (10.75 ounce) can condensed cream of potato soup
1 (10.75 ounce) can condensed cream of celery soup
1 (16 ounce) container sour cream
¼ cup milk
½ cup chopped onion
1 teaspoon salt
½ teaspoon ground black pepper
⅛ teaspoon dried dill weed
2 cups finely shredded Cheddar cheese
2 pinches paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Combine the potatoes, potato soup, celery soup, sour cream, milk, onion, salt, pepper and dill weed. Stir until well mixed; pour into prepared baking dish.

4 large baking potatoes, almost 1 pound each scrubbed
sea salt, for rubbing on skins before baking
8 slices bacon, about 1/3 pound
1/2 cup sour cream
1/2 cup heavy cream
4 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon pepper
4 ounces cream cheese
1/4 lb Fontina cheese, finely cubed
1/8 cup romano cheese, finely grated
1/2 cup shredded cheddar cheese
4 green onions, sliced, divided

Steps:

  • Preheat oven to 350 degrees.
  • Rub potatoes with salt.
  • Bake potatoes in preheated oven for 1 hour.
  • Meanwhile, place bacon in a large, deep skillet.
  • Cook over medium high heat until evenly brown.
  • Drain, crumble and set aside.
  • When potatoes are done allow them to cool for 10 minutes.
  • Slice potatoes in half lengthwise and scoop the flesh into a large bowl set skins aside for filling.
  • To the potatoes add sour cream, heavy cream, butter, salt, pepper, 1/2 the green onions and cheeses saving 1/4 cup cheddar for topping.
  • Mix with a hand mixer until well blended and creamy.

1/2 large onion, finely diced
6 oz velveeta cheese, cubed
1 Tbsp butter, sliced
1 can(s) cream of chicken soup
1 c chicken broth
3/4 c sour cream
1/4 tsp garlic powder
1/4 tsp seasoned salt
1/8 tsp pepper

Steps:

  • 1. Spray crock pot with cooking spray. Put potatoes, onion, cheese, and butter in crock pot.
  • 2. In a small bowl mix soup, broth, sour cream and seasonings. Pour over potatoes.
  • 3. Cover and cook on LOW for 6-8 hours or until potatoes are tender. After an hour of cooking (or when cheese is melted) lift lid and stir thoroughly.

6 c potatoes, parboiled, sliced or diced
1/4 c butter
2 Tbsp onion, diced
1/4 c all-purpose flour
1 tsp salt
1/2 tsp ground mustard
dash(es) ground pepper
1 1/2 c whole milk (can use part cream or half & half)
1 1/2 c cheddar cheese, shredded
2 c cooked ham, diced (optional)

Steps:

  • 1. Preheat oven to 350 F. Spray casserole dish with cooking oil spray or grease casserole dish with shortening.
  • 2. Saute onion in butter.
  • 3. Add 1/4 cup flour, salt, mustard, and pepper to onion and butter.
  • 4. Gradually add milk/cream whisking to make a nice white sauce. Stir and cook until thick.
  • 5. Add shredded cheese, potatoes and ham (if so desired). Stir all ingredients together. Add a bit more milk if needed. The potatoes will absorb some of the milk so you may need a little more.
  • 6. Pour into greased casserole dish. Bake uncovered in oven for about 30 min. Then, spread more cheese on top and bake for 10-15 min longer before removing from oven.

6 Tbsp butter
1/2 c cheddar cheese, grated
2 Tbsp parsley, minced

3 Tbsp real bacon bits

  • 1. Cut a large piece of heavy duty foil (or regular foil doubled up), about 18x22 inches.
  • 2. Place the sliced potatoes (peeled or not, your choice) and onions on the foil. Dot with the butter, then sprinkle the cheese, parsley, Worcestershire over all. Season with salt and pepper to taste. Partially fold up the foil around the potatoes. Pour in broth. Sprinkle with bacon bits. Seal edges tightly.

8 tablespoons (1-stick) salted butter
1 (28- to 32-ounce) bag frozen shredded hash brown potatoes (or Southern Hashbrowns, as in cubed)
1 medium onion, finely diced
1/4 cup all-purpose flour
1 cup milk
2 cups low-sodium chicken broth
Kosher salt and freshly ground black pepper
1 1/2 cups grated Monterey Jack cheese
1 cup sour cream
1/2 cup grated sharp Cheddar
2 cups kettle-cooked potato chips (or corn flakes)
1/4 cup grated Parmesan

Steps:

  • Preheat the oven to 350°F. Grease a 9-x-13-inch baking dish with 1 tablespoon of the butter. Take the potatoes out of the freezer while you are preparing the rest of the ingredients. Heat a large, deep skillet (or Dutch oven) over medium-high heat, then melt 6 tablespoons of the butter in it. Add the onions and cook, stirring occasionally, until the onions start to soften, 3 to 4 minutes. Sprinkle the flour over the onions and stir to incorporate. Transfer the mixture to the prepared baking dish. Melt the remaining 1 tablespoon butter in a small pan. Put the potato chips (or corn flakes) and Parmesan in a bowl and crush the potato chips. Pour in the melted butter and toss to coat. Sprinkle the crumbs over the top of the potatoes. Cover with foil and bake for 20 minutes, then remove the foil and continue baking until golden brown on top and bubbling around the edges, about 15 minutes more. Note: Depending on your oven, you might need about 25 minutes of baking time. The casserole should be bubbly and slightly brown around the edges. Let rest for 15 minutes before serving.

3 lb red potatoes, peeled, cut into 1/2'-slices

  • 1. Heat oven to 350. Spray a 3-quart casserole dish w/ cooking spray. Melt butter in lg skillet over medium heat. Add onion, cook about 5 mins, stirring occasionally.

4 to 5 large potatoes
1 pt whipping cream (2 cups)
salt and pepper to taste
2 tsp parsley flakes
2 c grated cheddar cheese

Steps:

  • 1. Cut potatoes into thin french fry strips, and lay the fries in a 9x13-inch glass pan
  • 2. Pour the cream over the top of the fries. Salt and pepper the potatoes very generously.
  • 3. Sprinkle at least 2 cups grated cheddar cheese over the top. Sprinkle parsley flakes on top of the cheese.
  • 4. Spray a bit of cooking spray on one side of a sheet of foil. Lay the foil over the baking dish, sprayed side down. Poke 2 or 3 holes in the foil to allow steam to escape.
  • 5. Bake in a preheated 400-degree oven, on the center rack, for 1 hour and 15 minutes, or until potatoes are tender.
  • 6. During the last 15 or 20 minutes of baking, lower the oven rack one notch, so the bottom of the potatoes will be brown and crispy.

Tips:

  • Use russet potatoes. They hold their shape well and become fluffy when mashed.
  • Peel and cube the potatoes evenly. This will help them cook evenly. Try to cut the potatoes into 1-inch cubes before boiling.
  • Boil the potatoes until they are tender. You should be able to easily pierce them with a fork.
  • Drain the potatoes well. This will help to prevent the potatoes from becoming watery.
  • Mash the potatoes until they are smooth. Don't over-mash them, or they will become gluey.
  • Add the milk, butter, and cream cheese. Stir until the ingredients are well combined.
  • Season the potatoes with salt, pepper, and garlic powder. Add additional seasonings to taste.
  • Serve the potatoes immediately. They can be topped with additional cheese, chives, or bacon.
