Creamy, Cheesy Potato Casserole image

A friend of my mother's made this when I was younger. It was the BEST potato dish I'd ever had. Thirty years later - and lots of tinkering - I finally replicated it. Now my husband and kids are big fans, too. I hope your family enjoys this as much as we do.

Time 1h15m

Number Of Ingredients 7

1 (3 lb.) bag frozen cubed hash brown potatoes, thawed
2 (8 oz.) pkg cream cheese, cubed/cut up
1 can cream of potato soup
1 can cream of chicken soup
2 (1 oz.) envelopes hidden valley ranch dressing mix
2 cups shredded sargento mexican 4-blend cheese
1 cup durkee fried onions, regular or cheese-flavored

Steps:

  • 1. In large bowl, blend soups and cream cheese. Microwave til creamy and cheese is melted, stirring occasionally. Stir in well, the dressing mix, then fold in 1 cup (half) the shredded cheese, then the potatoes. Fold well til all potatoes are coated. Pour/spoon into lightly greased 13x9 glass baking dish, mashing down a little, and spreading in pan evenly. Sprinkle top with rest of shredded cheese. COVER and bake at 350º for 50-55 minutes. Uncover, top with onions. Bake UNCOVERED for another 5 minutes or til onions are lightly browned. *Nice additions: 1 cup diced, fully-cooked ham. Cooked, crumbled bacon (4-6 slices). Sauted onions. Sauted mushrooms.

Tips:

  • Choose the right potatoes: Russet potatoes are the best choice for this casserole because they are starchy and hold their shape well. Yukon Gold potatoes can also be used, but they will be slightly less creamy.
  • Slice the potatoes evenly: This will help them cook evenly. Use a mandoline or a sharp knife to slice the potatoes into 1/8-inch thick slices.
  • Don't overcook the potatoes: The potatoes should be tender but still slightly firm. Overcooked potatoes will be mushy and will not hold their shape.
  • Use a good quality cheese: The cheese is one of the main ingredients in this casserole, so it's important to use a good quality cheese. A sharp cheddar cheese is a good choice, but you can also use a combination of cheeses, such as cheddar, Parmesan, and Gruyère.
  • Don't skimp on the butter: The butter adds richness and flavor to the casserole. Don't be afraid to use a generous amount of butter.
  • Bake the casserole until it is golden brown: This will ensure that the top of the casserole is crispy and the cheese is melted and bubbly.

Conclusion:

This creamy, cheesy potato casserole is the perfect comfort food. It's easy to make and always a hit with family and friends. With its creamy cheese sauce, tender potatoes, and crispy topping, this casserole is sure to be a favorite. So next time you're looking for a delicious and easy side dish, give this creamy, cheesy potato casserole a try.
