CROCK POT CREAMY CHEESY RED POTATOES
A great addition to any dinner. I've made these as a side dish to ribs; also a nice side for a holiday meal, BBQ, potluck or any average dinner. My dinner guests asked for second and third helpings! Courtesy of Taste of Home's Quick Cooking Magazine March/April 2003 magazine.

Tips for the Perfect Crock Pot Potatoes:
- Use the right potatoes: Russet potatoes are the best choice for crock pot potatoes, as they hold their shape well. Yukon Gold potatoes can also be used, but they may break down more easily.
- Cut the potatoes into uniform pieces: This will help them cook evenly. If your potatoes are too big, they may not cook through in the center.
- Season the potatoes well: Salt and pepper are the basics, but you can also add garlic powder, onion powder, paprika, or any other herbs or spices that you like.
- Add enough liquid: The potatoes need to be covered in liquid in order to cook properly. Use chicken broth, beef broth, or water. You can also add milk or cream for a richer flavor.
- Cook on low heat: Crock pot potatoes should be cooked on low heat for 6-8 hours. This will help them cook through without overcooking.
- Stir the potatoes occasionally: This will help prevent them from sticking together.
- Add cheese and toppings at the end: Stir in shredded cheese and any other toppings you like, such as cooked bacon, diced onions, or chopped chives, during the last 30 minutes of cooking.
Conclusion:
Crock pot potatoes are a delicious and easy side dish that can be enjoyed by the whole family. They are perfect for busy weeknights or for potlucks and parties.
