CREAMY BLUE CHEESE DIP WITH WALNUTS
Blue cheese can be a polarizing ingredient, but the sweetness of toasted walnuts rounds out the sharpness of the cheese in this creamy dip. If serving this dip to friends, surround it with large pieces of cabbage, sliced celery sticks and a sleeve of saltine crackers - and make extra, because it can disappear quickly. But it's built for more than entertaining guests: Slather it on a potato bun in a chicken cutlet sandwich, or use it to dress up a BLT.

CREAMY GOAT CHEESE, BACON AND DATE DIP
This appetizer is like a bacon-wrapped date in dip form - and every bit as luxe, sweet and simultaneously smoky as that sounds. Here, as you swipe crusty bread through the smooth cheese, you'll gather chunks of bacon and a bit of date, toffee-like from a quick fry in the meaty fat. You could embellish further, with nuts, chile or honey, or you could sip Champagne and dig in just as merrily - with friends hovering nearby for their turn.

Steps:
- Heat oven to 400 degrees. In a medium bowl, stir together the goat cheese, cream cheese, lemon juice and a pinch each of salt and pepper. Transfer to a 1-quart baking dish or ovenproof skillet, and spread into an even layer. Bake until warmed through and bubbling, about 20 to 25 minutes.
- Meanwhile, cook the bacon in a medium skillet over medium-low heat, stirring occasionally, until golden and crisp, about 10 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate, then add the dates to the bacon fat in the skillet, and cook, stirring occasionally, until the insides are warm and the outsides blister, about 1 minute.
- Top the baked cheese with the dates and bacon, and garnish as you wish. Serve at once.

THE ULTIMATE CREAMY BLUE CHEESE DRESSING & DIP
I have discovered Blue Cheese Dressing & Dip nirvana! I have yet to find a ready made that I like. I came up with this when serving Buffalo Chicken Wings last week. Why start from scratch when you can cheat?! :D Super simple and full of garlicy goodness & blue cheese. Great as a salad dressing, raw veggie dip, Buffalo Chicken Wings, etc. I have listed the full 12 ounce jar of Marie's Caesar dressing and 5 oz container of blue cheese. Use as much or as little of each ingredients as you like. The bottom line is, estimate how much you will need & make it to your liking. Thin it with mayo & milk if you are looking for a thinner dressing. Make it thicker ( dressing & blue cheese only) for dipping. Serving size is arbitrary based on the ingredients amounts you decide to use.

Steps:
- Decide how much Caesar dressing you will need.
- Add enough blue cheese crumbles to suit your taste. I like LOTS!
- If your dressing is too thick, add milk to thin or mayonnaise to stretch the amount of dressing. Mix, check for seasoning & adding more blue cheese or creamy caesar.
- Add pepper to taste.
- Combine all ingredients, but don't smooth out the chunks of blue cheese. That would be criminal!
- Serve and enjoy!
CREAMY SHRIMP, SPINACH AND GOAT CHEESE DIP
Adapted from a recipe from Firefly Farms, a maker of truly superior artisanal cheeses in Maryland. The cooking time is for thawing the spinach and chilling the dip. You can use reduced fat mayo and you can certainly spice it up some more, but I like the clean fresh taste this has.

Tips:
- Use high-quality cream cheese. This will make a big difference in the taste of your dip. Look for cream cheese that is smooth and spreadable, with no lumps.
- Soften the cream cheese before using. This will make it easier to mix and will help to create a smooth dip.
- Use fresh herbs and spices. These will add a lot of flavor to your dip. If you don't have fresh herbs on hand, you can use dried herbs, but use less since they are more concentrated.
- Don't overmix the dip. Overmixing can make the dip runny and less creamy. Mix just until the ingredients are well combined.
- Serve the dip immediately. This is when it will be at its best. You can also make the dip ahead of time and refrigerate it for up to 2 days. Bring it to room temperature before serving.
Conclusion:
Creamy cheese dip is a delicious and versatile appetizer that can be enjoyed by people of all ages. It is perfect for parties, potlucks, or just a snack. With so many different variations, there is sure to be a creamy cheese dip that everyone will love. So next time you are looking for a quick and easy appetizer, give one of these creamy cheese dip recipes a try.
