Tips:

  • To achieve a tender and juicy pork chop, opt for a flavorful cut like bone-in pork loin chops or rib chops. Look for chops that are about 1 inch thick and have a good amount of marbling.
  • Pat the pork chops dry before cooking to help them sear properly. This will also prevent the pork chops from steaming and becoming tough.
  • Season the pork chops generously with salt and pepper. For extra flavor, you can also add garlic powder, onion powder, or smoked paprika.
  • Sear the pork chops in a hot skillet over medium-high heat for about 3-4 minutes per side, or until golden brown. This will help to create a flavorful crust and lock in the juices.
  • After searing, reduce the heat to medium-low and add the champagne, chicken broth, and herbs. Bring the mixture to a simmer and cook the pork chops for an additional 10-12 minutes, or until they are cooked through.
  • To make the creamy champagne dill sauce, simply whisk together the sour cream, mayonnaise, dill, and lemon juice. Season with salt and pepper to taste.
  • Serve the pork chops with the creamy champagne dill sauce and your favorite sides. Mashed potatoes, roasted vegetables, or a simple salad are all great options.

Conclusion:

These creamy champagne dill pork chops are a delicious and easy-to-make meal that is perfect for a special occasion or a weeknight dinner. The pork chops are tender and juicy, and the creamy champagne dill sauce is rich and flavorful. Serve with your favorite sides for a complete meal that everyone will love.
