POTLUCK CAULIFLOWER AND LETTUCE SALAD

Potluck Cauliflower and Lettuce Salad image

There are many combinations for Cauliflower Salads, this particular version is the favorite in our area. A delicious make ahead, perfect for potlucks and family gatherings. Great salad to add to the holiday table. For those special occasions I serve this in a cut glass bowl ... making it look as good as it tastes. I have been known to add slivered almonds to make for extra crunch! This salad requires at least eight hours mellowing time ... best made the night before ... that is a big plus when you are cooking for a crowd!

Time 20m

Number Of Ingredients 8

3/4 c mayonnaise
1/2 c kraft ranch dressing
1/4 c grated parmesan cheese
1/4 c sugar
1/4 c finely chopped red onion
8 oz bacon, crisply cooked, crumbled
1 medium head cauliflower, cut into pieces
6 c torn romaine lettuce

Steps:

  • 1. Mix dressings, cheese and sugar in a large bowl. Add remaining ingredients; mix lightly. Makes 8 servings.

Tips:

- To save time, use pre-riced cauliflower or frozen cauliflower florets. - If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of regular milk. Let it sit for 5 minutes before using. - For a lighter salad, use light mayonnaise or Greek yogurt instead of regular mayonnaise. - Add some chopped bacon, shredded chicken, or hard-boiled eggs for extra protein. - For a more flavorful salad, add some chopped fresh herbs, such as dill, chives, or parsley. - Serve the salad immediately or chill it for later.

Conclusion:

This creamy cauliflower lettuce salad is a delicious and healthy side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a new salad recipe, give this one a try!
