Time 30m

Yield 4

Number Of Ingredients 6

1 medium head cauliflower, cut into bite-sized florets
3 cups milk
¼ cup butter
2 tablespoons cornstarch
½ cup cold water
salt and pepper to taste

Steps:

  • Put cauliflower into a large saucepan over medium-high heat. Cover with water and bring to boiling. Cook cauliflower until just tender, about 10 minutes. Do not overcook or the final product will be mushy. Drain water. Add milk, butter, salt, and pepper to the saucepan with the cauliflower. Bring to a gentle boil over medium heat, stirring often to prevent milk from scalding, about 5 minutes.
  • Mix cornstarch and water in a small bowl until cornstarch has dissolved. Add to boiling milk-cauliflower mixture. Simmer until sauce starts to thicken, about 5 minutes.

Tips:

  • Choose the right cauliflower: For the best flavor and texture, select a cauliflower head that is firm and heavy for its size, with tightly packed florets.
  • Roast the cauliflower to perfection: Roasting the cauliflower brings out its natural sweetness and caramelizes the florets, giving them a slightly nutty flavor. Roast the cauliflower until it is tender but still has a slight crunch.
  • Make the dressing ahead of time: The dressing for this salad can be made ahead of time and stored in the refrigerator for up to 3 days. This makes it a great option for meal prep or busy weeknights.
  • Add your favorite toppings: Feel free to add other toppings to this salad to suit your taste. Some popular options include crumbled bacon, chopped nuts, or shredded cheese.

Conclusion:

This creamy cauliflower caraway salad is a delicious and healthy side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. With its creamy dressing, roasted cauliflower, and caraway seeds, this salad is sure to be a hit at your next gathering.
