Steps:
- Melt the butter in a large saucepan over medium heat; cook the onions and celery until the onions are translucent, about 5 minutes. Stir in the flour, and cook for 3 minutes, stirring constantly. Gradually whisk in the chicken stock. Simmer until the celery is tender, about 20 minutes, stirring occasionally. Stir in the Brie cheese, and allow to melt for about 5 minutes.
- Pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth, and pour into a clean pot. Heat the soup to almost simmering over medium-low heat. Pour in the cream. To serve, garnish with red and green pepper strips.

Tips:
- Choose the right cauliflower: For the best flavor and texture, use a fresh, firm head of cauliflower. Avoid cauliflower that is bruised or has brown spots.
- Roast the cauliflower before adding it to the soup: Roasting the cauliflower brings out its natural sweetness and gives the soup a smoky flavor. You can roast the cauliflower in the oven or on a grill.
- Use a good quality Brie cheese: The type of Brie cheese you use will make a big difference in the flavor of the soup. Look for a Brie that is creamy and flavorful.
- Don't overcook the soup: The soup is best when it is slightly thickened but still has a bit of a bite to it. Overcooking the soup will make it bland and watery.
- Serve the soup with your favorite toppings: Some popular toppings for cauliflower and Brie soup include croutons, bacon, and chives.
Conclusion:
Creamy cauliflower and Brie soup is a delicious and easy-to-make soup that is perfect for a cold winter day. With its creamy texture, smoky flavor, and rich Brie cheese, this soup is sure to be a hit with your family and friends. So next time you're looking for a warm and comforting meal, give this soup a try.
