Custard
2/3 cup sugar
3 tablespoons water
1 1/2 cups whipping cream
1/2 cup milk
1/4 cup sugar
4 ounces imported milk chocolate, chopped
2 1/2 teaspoons instant coffee granules
3 large egg yolks
1 large egg
Ganache
1 1/2 teaspoons instant coffee powder
1/2 teaspoon water
4 ounces imported milk chocolate, chopped
2 tablespoons whipping cream

Steps:

  • For Custard:
  • Position rack in center of oven and preheat to 325°F. Place six 1/2 cup ramekins or custard cups in baking pan. Stir 2/3 cup sugar and 3 tablespoons water in heavy small saucepan over low heat until sugar dissolves. Wash down sugar crystals from sides of pan with brush dipped into cold water. Increase heat to medium-high and bring mixture to boil. Boil without stirring until mixture turns deep golden brown, swirling pan occasionally, about 9 minutes. Immediately divide caramel among ramekins. Carefully tilt ramekins to coat bottoms (not sides) with caramel.
  • Bring cream, milk and 1/4 cup sugar to boil in heavy medium saucepan, whisking until sugar dissolves. Remove from heat. Add chocolate and stir until chocolate melts and mixture is smooth. Whisk in instant coffee, yolks, and egg.
  • Divide custard mixture evenly among caramel-lined ramekins. Add enough hot water to baking pan to come halfway up sides of ramekins. Bake until custards are set around edges and centers move only slightly when baking pan is shaken, about 30 minutes.
  • Remove custards from water and cool completely. Refrigerate until very cold, about 4 hours. (Custards can be prepared 1 day ahead.)
  • For Ganache:
  • Dissolve instant coffee in 1/2 teaspoon water in small bowl. Combine chocolate and cream in heavy small saucepan. Stir over low heat until chocolate melts and mixture is smooth. Remove from heat and stir in coffee mixture. Cool until just warm to touch.
  • Divide ganache among custards. Spread ganache with back of spoon to cover top of custards completely. Refrigerate until ganache is set, at least 30 minutes. (Can be prepared 3 days ahead; cover.)
  • Run small sharp knife around edge of custards to loosen. Invert custards onto plates and serve.

SALTED CARAMEL MOCHA

Salted Caramel Mocha image

My son introduced me to this wonderful treat and the search was on! I had to find a way to make my own as I can't rationalize driving 35 miles one way to my fix. This delicious drink can now be had any time of the day or night! I hope you enjoy this as much as I do. *Prep & cook times are estimated. The first few times it took me longer, each time does get easier.

Time 20m

Yield 1-3 cups coffee

Number Of Ingredients 6

1 fluid ounce espresso or 3/4 cup coffee
1 1/2-2 tablespoons caramel sauce (see recipe below)
1 -2 tablespoon cocoa powder (the hot chocolate kind, not the unsweetened baking kind)
1 pinch sea salt (Starbucks uses a blend of smoked sea salt and turbinado sugar for sprinkling on top)
1/2 cup milk
1 -2 tablespoon whipped cream (optional)

Steps:

  • With an espresso maker:.
  • Prepare espresso. Place caramel sauce, cocoa powder and sea salt in a mug and pour espresso over them. Froth milk and slowly pour into mug, stirring to combine everything. Taste and add more caramel, cocoa and/or salt to taste. Top with whipped cream, drizzle caramel sauce, and a tiny pinch of sea salt.
  • Without an espresso maker:.
  • Prepare coffee. Place caramel sauce, cocoa powder and sea salt in a mug. Pour coffee into mug, stirring to combine everything. Heat milk in microwave or on the stove and add to mug, stirring everything to combine. Taste and add more caramel, cocoa and/or salt to taste. Top with whipped cream, caramel sauce and a tiny pinch of sea salt.
  • Salted Caramel Syrup:.
  • Makes enough for around 3-4 salted caramel mocha or hot chocolate beverages.
  • 1/2 cup sugar.
  • 3 tablespoons salted butter, cubed.
  • 1/4 cup heavy cream, at room temperature.
  • In a medium saucepan, cook the sugar over medium heat, stirring occasionally with a spatula (if it becomes lumpy, reduce heat and refrain from stirring). When it turns a deep amber color, add the butter and stir until it is melted. Add the heavy cream and whisk until the caramel is smooth (be careful, it will bubble up when you add the cream). Remove from heat and let cool. Refrigerate extra syrup.

Tips:

  • Use high-quality coffee: The flavor of your mocha will depend on the quality of the coffee you use. Choose a dark roast coffee that is rich and flavorful.
  • Brew your coffee strong: You want your coffee to be strong enough to stand up to the sweetness of the caramel and chocolate. If you are using a drip coffee maker, use two scoops of coffee for every six cups of water.
  • Make your own caramel sauce: It's easy to make your own caramel sauce at home. This way, you can control the sweetness and flavor of the sauce. To make caramel sauce, simply combine sugar, butter, and cream in a saucepan and cook over medium heat until the sugar has dissolved and the sauce has thickened.
  • Don't overcook the chocolate: When you are adding the chocolate to the mocha, be careful not to overcook it. Overcooked chocolate will become grainy and lose its flavor.
  • Garnish your mocha with whipped cream and chocolate shavings: This will make your mocha look and taste even more delicious.

Conclusion:

A creamy caramel mocha is the perfect drink to enjoy on a cold winter day or a hot summer afternoon. It's rich, flavorful, and satisfying. With just a few simple ingredients, you can make a delicious creamy caramel mocha at home. So next time you're looking for a special treat, give this recipe a try.
