I came up with this recipe in attempt to please my husband who is not keen on fake meats. We all loved this dish and I don't believe he realized that the strips were not real chicken breast. 12 ounces vegetarian chicken strips or 12 ounces Morningstar Farms Meal Starters chicken strips, thawed and cut into thirds
8 ounces campanelle pasta (your favorite pasta will work) or 8 ounces linguine, cooked al dente (your favorite pasta will work)
4 teaspoons cajun seasoning (see below for recipe)
1 -2 tablespoon butter
3 thinly sliced green onions
1 -2 cup heavy whipping cream (I use one cup heavy cream and one cup milk)
4 tablespoons chopped sun-dried tomatoes
kosher salt, to taste
1/2 teaspoon dried basil
1/4 teaspoon ground black pepper
1/4 teaspoon garlic powder
1/4 cup grated parmesan cheese
1/2 teaspoon oregano
1/2 teaspoon thyme
1 teaspoon paprika (I use Hungarian Hot Paprika)
1/4 teaspoon cayenne
1/2 teaspoon black pepper
1/4 teaspoon sugar
1/2 teaspoon cumin
1/2 teaspoon garlic powder

Steps:

  • Add Cajun Seasoning to a medium sized bowl.
  • Spray thawed chik'n pieces with a little bit of Pam and toss in bowl to coat with seasoning.
  • In a large skillet over medium heat, sauté chik'n pieces in butter until heated through, about 2-3 minutes.
  • Reduce heat and add green onion, heavy cream, sun dried tomatoes, basil, salt, garlic powder, black pepper and heat through until sauce slightly thickens. If the sauce gets too thick you can just add more milk and stir.
  • Pour over hot pasta and toss,with Parmesan cheese.

8 oz linguine pasta
2 boneless skinless chicken breasts
2 tsp olive oil
2 Tbsp unsalted butter
2 Tbsp cajun seasoning (divided)
3 garlic cloves (minced)
2/3 cup diced tomatoes
1 1/2 cup heavy whipping cream
1/2 cup grated parmesan cheese
2 Tbsp parsley (finely chopped, to serve)

Steps:

  • Bring a large pot of water to a boil and add 1 Tbsp salt. Cook pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water then drain, cover, and keep warm.
  • Beat the chicken breasts so that they are even in thickness and season all over with 1½ Tbsp cajun seasoning.
  • In a large non-reactive skillet*, heat 2 tsp oil over medium-high heat. Once hot, add the chicken and sear on both sides. Turn heat down to low and saute until cooked through and 165˚F on a thermometer. Transfer to a cutting board, slice into thin strips, and cover to keep warm.

1 tbsp olive oil
400g chicken breasts, chopped into large chunks
3 garlic cloves, finely chopped or grated
2 tbsp Cajun-style seasoning
400g can chopped tomatoes or passata
1 chicken stock cube, crumbled
500g penne or another tube- shaped pasta
150ml double cream
20g parmesan, finely grated, plus extra to serve
½ lemon, juiced
chopped parsley, to serve (optional)

Steps:

  • Heat the olive oil in a large, shallow saucepan or deep frying pan over a medium heat, then add the chicken, season lightly and fry for 6-8 mins, stirring occasionally until just golden all over - no need to worry about it being cooked through at this stage.
  • Stir in the garlic and cook for 2 mins more, then scatter over the Cajun-style seasoning and stir so the chicken pieces are evenly coated. Tip in the tomatoes, a quarter of a can of water and the stock cube. Stir, then bring to a simmer and cook for 5 mins.
