Time 10m

Yield Makes 1⅓ cups (enough for about 10 starter salads)

Number Of Ingredients 9

2 small garlic cloves, minced
1 teaspoon anchovy paste (see note)

½ cup freshly grated Parmigiano-Reggiano
¼ teaspoon salt
¼ teaspoon freshly ground black pepper

Steps:

  • In a medium bowl, whisk together the garlic, anchovy paste, lemon juice, Dijon mustard and Worcestershire sauce. Add the mayonnaise, Parmigiano-Reggiano, salt and pepper and whisk until well combined. Taste and adjust to your liking. The dressing will keep well in the fridge for about a week.
  • Note: Anchovy paste can be found near the canned tuna in the supermarket.

Tips:

  • Use fresh ingredients for the best flavor. If you can, use homegrown or farmers' market produce.
  • Make sure your Parmesan cheese is freshly grated. Pre-grated cheese doesn't have as much flavor.
  • Use a good quality olive oil. Extra virgin olive oil is the best choice, but a regular olive oil will also work.
  • Don't overdress your salad. A little dressing goes a long way.
  • If you're making the dressing ahead of time, store it in the refrigerator for up to 3 days.
  • Serve the dressing immediately or let it sit for a few minutes to allow the flavors to meld.

Conclusion:

This creamy Caesar salad dressing is a delicious and versatile dressing that can be used on a variety of salads. It's also great as a marinade for chicken or fish. With its creamy texture and sharp, tangy flavor, this dressing is sure to please everyone at your table. So next time you're looking for a salad dressing that's both flavorful and easy to make, give this creamy Caesar salad dressing a try. You won't be disappointed!
