CREAMY BOW TIE PASTA SALAD WITH PROSCIUTTO, PEAS, GRAPES, AND DRIED CRANBERRIES

Creamy Bow Tie Pasta Salad with Prosciutto, Peas, Grapes, and Dried Cranberries image

Whenever I serve this, I am hounded for the recipe. It's a great summer dish because of the tartness and fruit. It is substantial enough to be served as an entree pasta salad, but great with your favorite picnic dishes.

Time 1h35m

Yield 12

Number Of Ingredients 19

1 ½ pounds farfalle (bow tie) pasta
½ cup prosciutto, diced
½ cup mayonnaise
½ cup sour cream
⅓ cup 2% low-fat milk
2 cloves garlic, minced, or more to taste
1 lemon, zested and juiced
1 pinch lemon pepper
1 pinch paprika
1 pinch red pepper flakes, or to taste
salt and ground black pepper to taste
2 (6 ounce) packages frozen peas, thawed
¾ cup dried cranberries
¾ cup seedless grapes, halved
½ cup green onions, chopped
1 (5 ounce) can water chestnuts, drained and diced
½ cup grated Parmesan cheese
1 tablespoon chopped fresh oregano
1 ½ teaspoons chopped fresh thyme

Steps:

  • Fill a large pot with lightly-salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the bow tie pasta and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has nearly cooked through, but is still firm to the bite, about 10 minutes. Drain well, and rinse with cold water in a colander set in the sink. While the pasta is boiling, cook the prosciutto in a small skillet over medium heat until crisp. Drain on a paper towel-lined plate, and set aside.
  • Make the dressing by whisking together the mayonnaise, sour cream, milk, garlic, lemon zest and juice, lemon pepper, paprika, and red pepper flakes; season to taste with salt and pepper. Place the drained pasta into a large mixing bowl and pour 3/4 of the dressing overtop; reserve the remaining dressing. Add the peas, cranberries, grapes, green onion, water chestnuts, and Parmesan cheese; stir until the salad is evenly coated with the dressing. Cover and refrigerate at least an hour, or until ready to serve.
  • Toss the salad with the remaining dressing, oregano, and thyme to serve.

4 slice bacon, cut into 1/4 in pieces
3 clove garlic, smashed
2 c fresh kale, chopped
3 large eggs
1/2 c parmigiano-reggiano, grated
1/2 c parmesan cheese
2 c bow-tie pasta, uncooked

  • 2. Heat the reserved drippings and add kale. Cook until wilted. Add 1/2 cup water and cook until tender. Prepare bow tie pasta according to package. Drain and reserve 1 cup pasta water.
  • 3. In a large bowl whisk eggs and cheeses until combine. Stir in a little of the hot pasta water and then the pasta and kale. Add the bacon pieces and mix until everything is combine.

Tips:

  • Use high-quality ingredients: Fresh vegetables, flavorful cheese, and creamy heavy cream will make a big difference in the taste of your pasta dish.
  • Cook the pasta al dente: This means cooking it until it is just tender, but still has a slight bite to it. Overcooked pasta will be mushy and unpleasant.
  • Don't overcrowd the pan: When cooking the pasta, be sure to use a large enough pot so that the pasta has plenty of room to move around. Overcrowding the pan will prevent the pasta from cooking evenly.
  • Season the pasta water: Adding salt to the pasta water will help to flavor the pasta. You can also add a bay leaf or two for extra flavor.
  • Save some pasta water: When you drain the pasta, reserve about 1/2 cup of the pasta water. This can be used to thin out the sauce if it is too thick, or to add extra flavor to the dish.
  • Use a good quality cheese: The type of cheese you use will have a big impact on the flavor of your pasta dish. Use a cheese that melts well and has a good flavor, such as Parmesan, cheddar, or Gruyère.
  • Don't overcook the sauce: The sauce should be cooked until it is just heated through. Overcooking the sauce will cause it to lose its flavor and become thick and gloppy.
  • Garnish with fresh herbs: Fresh herbs, such as parsley, basil, or thyme, can add a pop of color and flavor to your pasta dish.

Conclusion:

Creamy bow tie pasta is a delicious and versatile dish that can be enjoyed by people of all ages. It is a great choice for a weeknight meal or a special occasion. With a few simple ingredients and a little bit of time, you can create a creamy bow tie pasta dish that is sure to impress your family and friends.
