BLUEBERRY JELLO SALAD

Blueberry Jello Salad image

A great Red, White and Blue recipe - I make this every Fourth of July. Use sugar-free Jello, fat-free cream cheese and light sour cream, if desired, to reduce calories.

Provided by Chef Reba

Categories     Gelatin

Time 20m

Yield 9-12 serving(s)

Number Of Ingredients 9

2 (2 ounce) packages raspberry Jell-O gelatin
2 cups boiling water
1 (20 ounce) can crushed pineapple
8 ounces cream cheese, softened
1/2 cup sugar
1/2 cup nuts (optional)
1 (12 ounce) package frozen blueberries
1/2 cup sour cream
1 teaspoon vanilla

Steps:

  • Dissolve Jello in boiling water. Pour into 12"x8"x2" dish. Add pineapple and blueberries. Chill or flash freeze until soft set. Combine cream cheese, sour cream, sugar and vanilla; beat until smooth and creamy. Spread evenly over salad. Sprinkle nuts on top.

Tips:

  • Use fresh blueberries: Fresh blueberries are the best choice for this salad, as they have the best flavor and texture. If you can't find fresh blueberries, you can use frozen blueberries, but thaw them completely before using.
  • Use a good quality gelatin: The quality of the gelatin you use will make a big difference in the final product. Look for a gelatin that is made from 100% natural ingredients and that is free of artificial colors and flavors.
  • Don't overcook the gelatin: Overcooking the gelatin will make it tough and rubbery. Follow the package directions carefully and remove the gelatin from the heat as soon as it has dissolved.
  • Chill the salad thoroughly: The salad needs to be chilled for at least 4 hours, or overnight, before serving. This will allow the gelatin to set properly and the flavors to meld.

Conclusion:

This creamy blueberry gelatin salad is a delicious and refreshing treat that is perfect for any occasion. It is easy to make and can be made ahead of time, making it a great option for busy weeknights. The combination of sweet blueberries, creamy gelatin, and crunchy pecans is sure to please everyone at your table.
