1 medium potato, peeled and diced
1 medium onion, chopped
5 green onions, chopped
1 medium carrot, chopped
1 celery rib, chopped
1/4 cup butter, cubed
1/4 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
1 can (49-1/2 ounces) chicken broth
1 pound fresh asparagus, trimmed and cut into 2-inch pieces
1/2 cup half-and-half cream
1 cup sour cream
2 bacon strips, cooked and crumbled
Additional sour cream
Asparagus tips, optional

Steps:

  • In a Dutch oven or soup kettle, saute potato, onions, carrot and celery in butter until onions and celery are tender. Stir in flour, salt and pepper until blended. gradually add broth. bring to a boil; cook and stir for 2 minutes., Add asparagus; reduce heat. Cover and simmer for 20-25 minutes or until vegetables are tender. Cool to lukewarm. , In a blender, puree vegetable mixture in small batches until smooth. Pour into a large bowl; stir in cream and sour cream until smooth., Serve warm, or cover and refrigerate for at least 2 hours and served chilled. 8 fresh asparagus spears, trimmed and tough base discarded
1 carrot, cut in julienne strips
2 boneless skinless chicken breasts, cut in half (about 1 1/2 pounds)
fresh ground black pepper
2 tablespoons flour
2 tablespoons butter, divided
1 tablespoon olive oil
1 tablespoon shallot, minced
1/2 cup dry white wine
1 tablespoon tomato paste
1/4 cup chicken broth
2 tablespoons heavy cream

Steps:

  • Bring 4 cups of salted water to a boil. Drop in asparagus and carrots and cook about 4 minutes until crisp tender. Do not overcook. Drain and set aside.
  • Season the chicken with salt and pepper, then dredge in flour, shaking off excess. Heat 1 tablespoon butter and 1 tablespoon olive oil in a skillet over medium high heat. 1 medium onion, thinly sliced
1 1/2 pounds asparagus, trimmed and cut into 1-inch pieces
One 2-inch piece fresh lemongrass
4 cups vegetarian no-chicken broth, vegetable stock or vegetable broth
1 tablespoon flat-leaf parsley leaves
3/4 cup coconut milk, lite or full-fat
1/2 cup frozen baby peas, thawed
Kosher salt and freshly ground white pepper
Lemon zest, for garnish
8 ounces thin asparagus, trimmed and roughly chopped (1 cup)
1/2 cup roughly chopped carrots (1 medium carrot, peeled)

Mix together well, season to taste with salt and pepper and let stand at room temperature for 1 hour to allow the flavors to develop if time allows. The salsa can be refrigerated in an airtight container for up to 1 week. Makes 2 cups.
