Steps:
- 1. Peel and cut onions (I halve them then cut in 4-5 pieces from there) If you can find them (we can't get them here any more) you can use 2 or 3 cans of pearl onions instead of cooking reg. white onions) Cover with water and a dash salt and boil until just tender. Drain into a colander over a large bowl and reserve 1/4 cup of the liquid.
- 2. Meanwhile make white sauce by melting 3 tbsp. butter/marg. add 3 tbsp flour, gradually add the 1/4 cup reserved onion water and 1/2 cup of milk, stir constantly over med-high heat until thick. Add dash salt, pepper and onion powder.
- 3. Pour sauce over cooked onions in a greased 2 qt casserole and mix until onions are all coated. Butter 3 slices of bread and cut into cubes, place over onions butter side up in a single layer and bake at 350 for 25-35 minutes until bread cubes are crisp and lightly browned and sauce is bubbly.

CREAMED ONIONS
This is my absolute favorite dish that my mom makes. The onions have a mild sweet flavor, and there's plenty of the rich creamy sauce. The sweetness makes a nice complement to the Peppered Beef Tenderloin. -Denise Bitner Reedsville, Pennsylvania

SCALLOPED ONIONS, LEEKS, AND SHALLOTS
Steps:
- In a heavy kettle cook the onions, the leeks, and the shallots in the butter with salt and pepper to taste, covered, over moderate heat, stirring occasionally, for 10 minutes, reduce the heat to moderately low, and cook the vegetables, stirring occasionally, for 10 to 20 minutes more, or until they are soft. Remove the lid and cook the mixture over moderate heat, stirring, for 3 to 5 minutes more, or until the excess liquid is evaporated. The onion mixture may be made 2 days in advance and kept covered and chilled.
- Preheat the oven to 375°F. Transfer the onion mixture to a 2-quart shallow baking dish and stir in the cream. In a small bowl toss together the bread crumbs and the Cheddar, sprinkle the mixture evenly onto the onion mixture, and dust it with the paprika. Bake the onion mixture in the middle of the oven for 20 to 30 minutes, or until the cheese is melted and the mixture is bubbly.
Tips:
- Choose the Right Onions: Yellow or white onions are best for this recipe as they have a milder flavor. Red onions will impart a sharp, bitter taste.
- Slice the Onions Evenly: Uniformly sliced onions will ensure even cooking.
- Use a Large Skillet: A large skillet will allow the onions to spread out and caramelize evenly.
- Caramelize the Onions Slowly: Low and slow is the key to perfectly caramelized onions. Cook them over medium-low heat, stirring occasionally, for at least 30 minutes.
- Don't Crowd the Pan: If you're cooking a lot of onions, cook them in batches to avoid overcrowding the pan.
- Season to Taste: Add salt, pepper, and other seasonings to taste. You can also add a splash of white wine or vinegar for extra flavor.
- Serve Warm or Cold: Creamed scalloped onions can be served warm as a side dish or cold as a salad.
Conclusion:
Creamed scalloped onions are a delicious and versatile dish that can be enjoyed in many different ways. They are a great addition to any meal, whether served as a side dish, main course, or salad. With their sweet and savory flavor, creamy texture, and ease of preparation, creamed scalloped onions are sure to be a hit with everyone who tries them.
