HARD TIMES CREAMED TUNA
Times were tough for my newly divorced mom in the 70's. I remember eating creamed tuna on toast with a green salad on the side at least weekly. It was one of my favorite meals, and I had no idea we were eating it out of necessity. Times aren't so tough now, but I still make this about once a month. It's great when you're in a hurry, or have limited supplies on hand. My kids love it too!

CREAMED TUNA ON TOAST
When we were kids, my mother was on a shoe string budget. By the end of the week the cupboards were getting bare and she would have to throw something together for us to eat. This was usually what she would throw together. Its quick and easy and most kids love it if they like tuna! Even my husband and my son enjoy this one!

Steps:
- 1. In a sauce pan combine the cream of mushroom soup, dash of pepper and peas. Heat on low setting so not to scald and burn.
- 2. If the mixture seems too thick you can add a dash of milk, but you want a thick mixture and not runny. Break up your tuna adding it to the creamed mixture. Heat to a low simmer bubble.
- 3. Serve over buttered toast.
CREAMED TUNA ON TOAST -- WHAT??
I will admit, there is absolutely nothing about this recipe that made sense to me growing up, other than I really liked it. Mama made it often as a way to stretch a dollar. But, Mama also told us that you shouldn't drink milk with fish. So when I found out she used milk to make this for us, I had some moments of uncertainty ......

My mom gave me this recipe. It is different from most of the cream tuna on toast recipes I have seen because it has lots of cheese.

Tips:
- Choose high-quality tuna. Opt for solid white albacore tuna packed in water or oil, or flaked light tuna packed in water. Avoid tuna packed in oil if you're watching your fat intake.
- Use a variety of seasonings. Experiment with different herbs, spices, and condiments to create a flavorful creamed tuna. Some popular options include dill, parsley, chives, onion powder, garlic powder, lemon pepper, and Dijon mustard.
- Don't overcook the tuna. Tuna is a delicate fish that can easily become dry and tough if overcooked. Cook it just until it is heated through, about 2-3 minutes.
- Serve creamed tuna on a variety of breads. Toast, bagels, English muffins, and crackers are all great options. You can also serve it over rice or pasta.
- Garnish with fresh herbs or vegetables. Chopped parsley, chives, or dill add a pop of color and flavor to creamed tuna. You can also top it with sliced tomatoes, cucumbers, or avocado.
Conclusion:
Creamed tuna on toast is a quick, easy, and affordable meal that can be enjoyed for breakfast, lunch, or dinner. It's also a great way to use up leftover tuna. With so many different ways to make creamed tuna, you're sure to find a recipe that you'll love.
